AHHG I'm still currently building money for a new PC and equipment to record from my Xbox and PS 2 and 3 but I'm pretty much going nuts over thinking about, what to post, what to say during video's, how do I rate them, what will my channel name be, what will the title cards look like, will I have contest for the fans and AHHHG!

No more panicky? Good. Look, the best advice for anyone to go into a business like reviewing is by having a related occupation or education in that area. But that's only if you want to go pro with it, which, I'm assuming you don't. That said, I think what you have to ask yourself is whether you find the process of reviewing enjoyable. Because it should be fun, especially if you're doing it on your one day off in the week. Don't take into account how many people will watch it. Hell, if only one person would see those reviews you made, would you still enjoy making them? I'm pretty sure every youtube reviewer starts with nearly no-one to watch their stuff. Then it grows, hopefully, with more people watching it but in the end the only person you're making them for is you, because you love making them.
Another easy step is just to script your reviews, sit down, open a text document and start writing what you feel is important to say, and then, when you're finished, record it. Structure is also a good way to keep you from wandering off topic, for example every review deals with the topics of gameplay, lore, characters, etc. That way viewers will know what to expect from your stuff.
As far as believing your stuff is shit, well, think of it this way, there are SO many reviews on youtube, it's very unlikely yours will EVER be the worst. Don't let yourself get laughed off, Youtube comments are the cesspool of all arguments ever made, never give those trolls the attention they so desperately crave. Different people like different things, there will always be people out there who can enjoy your stuff.
If you want to put your face in the review, rather than just game footage, it might be an idea to invest in a good high grade camera, and talk to a theatre/amateur film group in your area to get some advice on make up and camera angles.
