Hm I'd have to go with Dragon's Dogma. I hadn't really heard anything about it when I picked it up other than that it was sort of like if skyrim and demon's souls had a baby. I liked skyrim, didn't really enjoy demon's souls, but I figured I'd give it a shot because the pawn system sounded interesting.
It frankly exceeded all of my expectations. The combat is engaging, the bosses are excellent, and the atmosphere of the game is just incredible. It's like dark souls and skyrim has a kid and then let monster hunter babysit on weekends. I love how the day/night cycles actually change the environment as well as make you aware of how long or short a trip is when you set out on a quest. Time becomes a resource you have to manage just like anything else. Can I make it to where I need to be before nightfall, and can I make it back, camp it out, or just try and fight my way through all the new enemies.
