Little Big Planet, once you complete the main game, you have an entire online community to supply you with more levels.
Batman, Demon's souls, Fallout 3/nv, Dragon age, Uncharted 2, Kill zone 2. I wouldn't bother with heavy rain, it's a nice game but once you play through it there's no reason to play it again because you know who the killer is and it won't change. It's like watching a CSI ep and already knowing how the person died and who did it.
My word, Only one INFamous mention? Easily one of my faves. And gotta agree with the ratchet and clank recommendations. Easily my most beloved game series ever. Uncharted two's darn good to. But you know that.

I second the Orange Box. (Though I've heard that its a pretty bad port, I still thoroughly enjoyed Portal)
My favourites would still be God of War 3 (and the 1&2 pack) And Arkham Asylum. The Force Unleashed II looked pretty good as well, but I haven't tried it, same with Assassin's Creed 2.

Uncharted 2 is a must, especially since they just released a Game of the Year version with all the DLC.
God of War 3, Red Dead Redemption, Ratchet and Clank: A Crack in Time, and Battlefield: Bad Company 2 are all really really good and are from the past 18 months.
Also if you like Zelda you should at least rent Demon's Souls. One of the best games this gen.

Uncharted 2, inFamous, and Heavy Rain. Some of the best PS3 games out there and you will not regret it.
