Good call picking up beyond good and evil (best game lineup by ubisoft ever was when they released bge and pop:sot at the same time) .

The recommendations here here are surprising and unusual (like rayman 3), and I give you guys kudos for that, because I agree with most of them. I guess the following games tend to get old as time goes by, but I really liked ssx 3 and burnout 3.
James bond everything or nothing is a surprising gem too, you can find a video review here: http://www.gametrailers.com/player/usermovies/291821.html .
Rayman revolution and the yakuza series are also worth mentioning.

In keeping with the more obscure arthouse recommendations I'd say also pick up Shadow of Destiny. Mark of Kri is another to keep in mind. Both are cheap, fun games that not a lot of people know about.

God Hand is crazy hard and really fun. Twisted MEtal Black is fun as well. Cold Fear is a really cool survival horror game; I hadn't heard of it until a few years ago. CAll of Cthulu: Dark Corners of the Earth was supposed to be freakin awesome, but I was never able to play it.

And Gran Turismo 3 and 4.

A lot of the games already mentioned in this thread are some of the best for the PS2, so I won't mention them anymore.

If you have some sort of thing for giant robots, I can't recommend RAD (Robot Alchemic Drive) enough. Sure, it had terrible story, terrible voice acting and terrible escort stupid friend to spot x quests, but you get to control a clumsy (this is good) giant robot. You then fight giant aliens from outer space. In a cityscape that can be demolished, then suddenly magically reconstructed for the next chapter.

What makes it great is the amount of control you have over your mech. Each button in the controller is used for just about every action.

EDIT: Watch out for a proper review from me some time soon.

I cannot stress the importance of Shadow of the Colossus. That game made a huge impression on me, and it was one of the last new games I played on that system.

Timesplitters 2 & Future Perfect are awesome. I've heard 1 is good but never played it myself.
Resident Evil 4 is amazing. I entered it expecting a fairly standard TPS experience and was blown away by just how good it was.
Killzone is also very good but that game seems to divide people.
Fahrenheit's pretty good.
and most of the ones mentioned above I would agree with.

depending on what types of games you like to play...

GTA San Andreas is a beast of a game.
Metal Gear Series is always some frustrating (in a good way) fun
Final Fantasy XII
Kingdom Hearts
Red Faction
MegaMan Collections (yay nostalgia)
Winning Eleven
Good list, might I also add a few of my favorites:
FFX
Shadow of the Colossus
Both Dark Cloud games
Resident Evil 4
Growlanser Generations
Ys: Ark of Napishtim
Max Payne

Thats all I can remember for now. I kinda feel your pain about the new generation of games. I thought the PS3 would have a larger selection of good RPG's by now (No offence to Valkyria or FallOut).

Hardly anyone had it but there was Internet for PS2 (I had the fat one with an adapter) what I miss was Star Wars Battlefront 2 online, the community was really nice their was a lack of players ( about 30-40 ) but everyone knew each other and the memories of those days are imprinted into my mind forever it was the game that brought me in to the world of Online Gaming.

Wow, thanks for all the suggestions. I'm keeping an eye out for Shadow of Collosus, but it seems impossible to find.

Racket & Clank is one I'm deffintly getting at some point, as I enjoyed Jak & Daxter so much.

Also, is Killer 7 on the PS2? I was under the impression it was a Gamecube exclusive. I'm nearly finished playing No More Heroes (my god is that last boss hard!) so if it is on the PS2 I'll have a look around.

Anyway, thanks for all the suggestions, if you can think of something that isn't on the list so far, please say.

If you have a Wii (allowing you to play No More Heroes), why don't you get the Gamecube version?

But yes, it was ported to the PS2 (although apparently it's not as good).

I don't have a gamecube controller.
