Strategy? Depends on your team.
in aoe2 + exp, against AI

-The big winner is usually cavalry (paladins preferably). In big enough number -nothing- can stop them (top anti-cavalry units cant even slow them down), just getting 40 of them is usually enough to crush a whole lot of things.
-Longbows (massive range)
-teutonic knights (walking tanks, slow, but its like trying to stop a mountain)
-Mongol rams full of infantry (its basically a supersonic APC) and mangudai rule at hit n'run tactic.
-bring a few trebuchet to take down castles quickly. 4-6 is usually more than enough.
-Abuse walls to control AI movements
-control the sea when possible, pattrol all borders, protect all chokepoints. If you control the sea in island maps you win.
-Abuse trade. (better with spanish) = unlimited gold. DO NOT destroy ennemy docks and markets if you can help it.
-Abuse cannon ships with spanish (they are very powerfull)
-Fill transports with filled rams, then unload and attack. Bring lots of cavalry. As rams are destroyed.. more of your guys rush out.

oh, and get lots of villagers for all ressources. I like using fishing boats for food, just build fish "cage" in a corner and enjoy pretty much an unlimited food suply.

I usually gather resources while building defense and scouting the terrain. I'll build smaller villages for quick troop movement.

I tend to build enough of every unit to ensure I'll be able to properly counter anything the enemy throws at me. I'm huge on organization. I keep my troops numbered and set up properly.

Then, I'll attack at a weak point that I found while scouting, making sure each regiment is properly supporting and supported. Walls go down with Siege Rams that have appropriate swordsmen in them.

If my first attack fails, I'll rebuild my army accordingly and do it again. Sometimes I'll send in a small troop and flank with a larger army from another side.

Build up walls, two full lines of my best walls spiked with towers should suffice. Sometimes if on hard I get some castles on strategic points too.
That's pretty much it. I will then wait and collect all ressources possible to go towards my trebuchets and as many longbowmen (I'm normally Britsh) as possible.

And if I feel like charging I just send in my instant-kill longbowmen who destroy half the enemy army with concentrated fire before they can even reach them. Trebuchets are for walls and castles.
I like to keep my men alive, I'm not Russia.

Get resources, possibly build walls (made of castles and bombard towers, possible with several layers of fortified walls in front of them).

Make an army consisting of Paladins (as many as you can select)
Do the same for champions
Make Trebuchets, Siege onagers and possibly Siege rams (and I seem to remember bombard cannons, protected by hand cannoneers).
Slaughter your enemies

My usual strategy for Age of Empires 2 is known affectionately to me as "Bees", which is basically (playing as the British) spamming with Longbowmen upgraded with fire arrows. NOTHING STANDS UP TO IT.
