For me, BioShock 1! I was literally minutes away from beating it, chasing Ryan around... I've beat the 2nd game, but not the first. I have the disk beside my PC, might just have to do it! Although, then I'd be midway through Crysis, and very early in Mass Effect 1, and NFS Shift... ah crap! Red Dead comes out in 12 days! NOOOO I NEED MORE TIME!

Darn you. I've got more unfinished games than I can count, and I was already working on mot of them anyway, which might be my problem, that I'm splitting my focus between Legend of Zelda Wind Waker, Super Mario RPG, Pokemon Crystal, and Super Mario Bros 1-3, among others.
