Surprised no one mentioned Spice and Wolf [http://www.animenewsnetwork.com.au/encyclopedia/anime.php?id=8537] yet.

This might fit the bill a little more, since the female lead is a little more in control than most other series, and it has a brain in it's head!, the logistics behind trading, money purity and other little things.
The first series also isn't very long(12 eps) therefore not outstaying it's welcome and not dragging on if your girlfriend doesn't like it.




(Might be a good idea to see if a tail creeps your girlfriend out first, LOL.)

You could always try Death Note, even my parents who don't like anime enjoy Death Note.

I would go with Spirited Away and Full Metal Alchemist primarily because both of them have a very good dub so she won't have to try and follow subtitles. Spirited Away is good because it won an Oscar so you can use that as a reason to give it credability and its a great film to boot. You should try FMA because it has some decent humour in it and while its universe may be a bit off, it (almost) always follows the rules it sets for itself and as so is easier to follow along. Also, everyone loves Hughes!

Welcome To The NHK is one of the deepest animes I've ever had the pleasure to watch.
There's also Fruits Basket as some has mentioned already.
Serial Experiments Lain is supposed to have a deep plot, but I haven't watched far enough to know for sure.

I'll agree on spirited away but if she wants something less of a fairytale you could try for the aforementioned Friuts-basket (for love-story/humor) or Ghost in the shell (for action) or Escaflowne (a little of both)

For gods sake do not introduce her to anime by showing her words worth, queens blade or similar fanservice shows.

Finally:

WHY HAS NO ONE MENTIONED Kareshi kanojo no jijou?! It's a high school drama with humor, emotions, fun story and great characters. Are you all so young that you've only known Naruto and lucky star? For reference, "Karekano" -as it is called- was directed by Hideaki Anno, who is the brains behind a small show called Neon genesis evangelion.

Jeez, you young whippersnappers need to watch more proper anime.

I can recomend "Ai Yori Aoshi" for beginners in the Anime world and especially for woman.
It has good quality no violence and a decend romantic story to melt the most frigid famale anime haters heart.

I'd recommend starting her off with Studio Ghibli. Most "shojo" anime is boring and formulaic, so I'd recommend that she steer clear of it. Also, Dragon Ball Z (I know, I know, but it's enjoyable in its cheesiness and it's a series that knows it's ridiculous and silly).

That said, if she doesn't like it, is it really that big a deal? I can understand wanting to share interests, but surely you share others, too.

Maybe 'Azumanga Daioh', 'Hidamari Sketch'. I'd suggest 'Kyouran Kazoku Nikki', but that might be under the category of "out there". 'Zero no Tsukaima', and I guess maybe 'Seto no Hanayome' and 'Sayonara Zetsubou Sensei'. I personally really like 'Sketchbook ~full color's~' and 'Minami-ke', but don't know if those are weird enough for you.

Why not just let her not like anime? She shouldn't have to like something just because you like it.

How would you feel if she tried to get you to like something just because she liked it?

anyways on to the topic: cheesy girly stuff? easy, one can always look at animes derived from shoujo mangas. examples of these include:

fruits basket
kare kano
skip beat
kimi ni todoke

yup, just try starting her off with these-tell me if it works.

if it doesn't try to give a a bit of details and i'll try to work out another solution.
