couldn't resist, no harm intended, i do know some anime that chicks tend to like, but what is the girl in question like? 'female' does leave a huge range of stuff, any narrowing factors?

There is actually a whole section of anime that is dedicated to women called shojo. However, in the West, anime seems to be dominated by male-oriented titles and manga is pretty much dominated by female-oriented titles.

If you want something you can both watch...

Full Metal Panic
Full Metal Alchemist (chicks love this anime for some reason)
Inu-Yasha (be warned, it's like the chick version of DBZ so it's like a billion episodes)
Genshiken
Great Teacher Onizuka
Haibane Renmei (she will probably like this if she likes Miyazaki's work)

Agreed that Berserk is great, though may be too violent for her tastes. I think 'Golden Boy' is hilarious. It's silly and the main character is a creepy perv, but it's pretty funny and watchable.

I think this depends a lot on what kind of interests your girlfriend has. Honestly my GF and I watch loads of anime together, but alone i've watched nearly a thousand hours i'd say. I'll list some of the more notable one's that seem to span specific interests. "none of the following are hentai"
Comedy/action: Full metal panic/fummofu, Trigun, Outlaw star, full metal alchemist, Black Kat, GunXsword,
comedy/romance: FMP/fummofu "again", Ouran High School "definitely"
action/romance: Berserk, Rahxephan, Gundam Wing "don't recommend too highly if you don't find the classical game of thrones interesting", Ergo Proxy, Gungrave
comedy/dickin around: Lucky Star, Cromartie HS, Ouran HS "again"
indescribably unique and excellent: Dead Leaves, Ghost in a Shell, Princess Mononoke, Akira, Cowboy Bebop, Big O, Paranoia Agent, Deathnote. Fooly Cooly, Hellsing, Vampire hunter D.

above all just remember her tastes. What she likes to read is a good indicator of what she'll like to watch. oh yeah DON'T WATCH DUBS most of them are pretty bad, if you can, stick to subs and you will be pleased. A few notably good dubs are Cowboy Bebop, Big O, and FLCL. "if you want more anime just message me or something, there's no way i can remember everything i've watched at once"

Oh, and although I don't know if it's available on DVD, Tactics kinda fits your description. It came on Mondays on the SciFi channel, and though I only got the last bit of the show, I thought it was pretty cool. Japanese exorcism, ghosts, goblins, and humor to boot.
Maybe a fight scene or two, but they are crucial to the story, and usually not bloody.

I would suggest a bunch of Miyazaki's work here, because I'm a huge fan, but seeing as we're trying to steer away from that, I would say Paprika and FLCL are both fantastic. Crazy, gorgeous animation (especially in Paprika) and they never really get old...

I love Cowboy Bebop as well, and although there is some fighting almost every episode, it's almost always either humorous or essential to moving the story along, so it's okay. Brief bare nipples in Paprika, be warned.:p

I can't think of anything else really stunning I've seen lately... Nana is very girl-oriented and has some pretty well-rounded characters, but probably enough so make most guys gag. And honestly the only reason I kept watching after a while was because I was hoping this stupid pregnant girl would die in childbirth...

If your girlfriend likes Miyazaki and you personally are trying to find an anime you'll survive through, you've got to watch Dennou Coil. Dennou Coil is absolutely amazing!!! Think light, refreshing Miyazaki with a techie twist. It's simple, romantic, sad at points, funny at others, suspenseful, exciting, mysterious, and absolutely breathtaking where the art and animation is concerned. It's 26 episodes, which is what I think is a decent length for an anime series, and I enjoyed every second of it. Watch it now!

I'm going to split this up into categories. Pay attention now. 8D

If your girl is feeling like something HAPPY or CUTE or FUNNY: Most of Ouran is great, if she can understand the reverse harem genre. Try and stay away from the last few episodes, which are pretty depressing. Lucky Star is pretty good for the wtflol factor. Eyeshield 21 is pretty good if you're desperate for testosterone -- it's hilarious all around, you get American football, she gets hot guys to ogle. Wait, sorry, that came out wrong. XD The only other anime I can think of to suggest here is Yakitate Japan!, but it's a little pun-heavy and I'm not sure if we English natives can appreciate it fully.

If your girl wants some DRAMA or TRAGEDY: Voices of a Distant Star would be number one on my list -- it made me cry in a good way. I saw someone mention Air, so if the art style doesn't put you or your girlfriend off, go for it; your girl will be hooked by episode 2. If you get to the end, the story gets really abstract, so you two might want to pause and let it soak for a while. Go for Kino no Tabi if she's feeling like an adventure, or, if you're really brave (or have really strange taste... like me...), give Mononoke or Mushishi a test drive. Finally, Gunslinger Girl is wicked sweet and everyone should watch it.

If your girl wants ROMANCE: Again, Fruits Basket would be GREAT, if you care to pick and choose episodes (some are really, really depressing). It's wonderfully romantic.

If your girl wants ACTION: Along with Cowboy Bebop, I would suggest Baccano!. It's smart, classy, lots of fun, and best of all, it has hot guys in it. Wait, sorry, that came out wrong. :) It's about the Mafia in Depression Era America. The story is well-planned, twisty as all get-out, and satisfying. Check if your girl can handle gore and violence, though (here's a little preview -- tell her a small boy's head gets completely blown off by a gun at point blank range within the first ten minutes). Otherwise, Tengen Toppa Gurren Lagann is a solid piece of eyecandy. :)

If your girl PLAIN DOESN'T KNOW or CARE: I would try Clannad. It has a little bit of everything: action, romance, comedy, drama, etc, etc, (with lots of JRPG nods if you or your girlfriend's into them), plus the story just gets plain addicting after a while. If you stick with it after episode 4, bring some tissues.

I LOVE "Magic Knight Rayearth". Also, I haven't finished scrolling but no one's mentioned "FullMetal Alchemist" yet? I'd go with FMA long before "Cowboy Bebob", but maybe that's just me. (Not that there's anything wrong with CB, not at all.) <3 Alphonse. <3<3<3.
Also I liked "Gundam Wing", "Outlaw Star", "Rune Soldier Louie", and "Ronin Warriors", to name a few. For sheer silliness, "Galaxy Angel" was a good time. Not as out there as FLCL, but still a great deal of "wtf, mate?" If she wants to go the manga route, you might try "Wish". "Chobits", anyone? I'm really getting into "Scrapped Princess" but they're slow around here with the releases. I also like "Vampire Hunter D", but then again, I grew up with "Voltron", 80's "Transformers", "Thundercats", and "Silverhawks". I STILL love Silverhawks, and I had all the little Voltron lions. That's all my sleep-deprived brain can come up with at the moment; hope it helps!

Edit: I found all the FMA references *right* after where I stopped reading before I posted. Figures. ...this post has also been great for me! I'm getting new references of things to watch! Now that I'm not 16 anymore, DBZ isn't as fun as it used to be...therefore Inuyasha (and yes I've watched quite a few episodes) just doesn't hold it for me. It's everywhere though... must just be me. Bleh, I'm old. =)
