I haven't watched too many animes, but Cowboy Bebop and Trigun stood out to me. I'd also give the Berserk anime a try. It has about a million things wrong with it but it's still so damn good.

I'd recommend looking them up before watching them to see if the premise is something that you'd like. They're all good, don't get me wrong, but for different reasons.

You're going to see tons of Gurren Lagann recommendations. This is entirely justified. It is a wonderful series full of awesome. It doesn't hurt that the dub's pretty freakin' amazing, too.

High School of the Dead is great for a laugh.
Air Gear is decent, but I don't recommend it unless you read manga, they ended it way short.
Busou Renkin is an amazing anime. you should check that one out for sure.

Spice and Wolf is brilliant, too. It make medieval European economics and trade exciting and awesome.
Seriously! When someone explained Spice and Wolf to me i was kinda like...that sounds stupid but then I finished the whole series in a good 3 days. Nothing made me sadder then that beautiful show ending :(

Time for some underrated shows:

Sora no Manimani: A 12 episode show about a boy who grew up in a small town, moved away, and is now coming back as a high schooler and he has a girl best friend. Ya, I know you've heard that before. However, this show is really sincere, and its just a great show. Also, a lot of the voice actors have done some recent stuff. The main example of this is Kanae Itou, who voices the female lead. 2 of her latest shows are amazing, which brings me to...

The World God Only Knows: 2 seasons, 12 episodes each. Basically, a dating-sim expert is bound to a contract by a demon where he has to use his knowledge of gal games to extract demons from real girls by making them fall in love with him. Yes, all the girls are stereotypes, but its a really well-done and honestly funny show.

Hanasaku Iroha: 26 episodes. A slice of life where a city girl, Ohana, has to move in with her grandomther after her mother suddenly runs off. Ohana's grandmother owns an old-fashioned inn, and Ohana has to work there as an employee to earn her keep. She deals with romantic trouble and just learning to get by. This is probably the 2nd best thing that I watched last year. When you're supposed to laugh, you laugh. When you're supposed to cry, you cry. Its a very emotional, character-driven show.

AnoHana, or Ano Hi Mita Hana no Namae o Bokutachi wa Mada Shiranai: 11 episodes, slice of life. This show follows Jinta, a teenage boy who doesn't go to school, and has little contact with the outside world. That all changes when his childhood friend, Meiko Honma, or "Menma" as she was known when they were kids, suddenly appears and asks him to grant her a wish by getting their old group of friends back together. There's just one problem: Menma has been dead for years. This show made me cry. Many. Many. Times. Its not too long that you get bored, and while maybe the end is a bit rushed, its still emotional. Every character gets a good amount of time in the spotlight. They all get time to show how they've changed and why. Its a beautiful show.

That's all I got. There are some standards, like Angel Beats, Clannad, Gankutsuou: The Count of Monte Cristo (which is, quite seriously, probably the closest any anime has ever gotten to perfection. Ever.), and other classics or new hits.

Steins;Gate was a really good one that was aired a couple of months back. It has a slow start but then crazy happens.

Durarara and Baccano seem to be solid choices as well.

Black Lagoon - Best described as Grand Theft Auto: Southeast Asia, it's a well animated, well voiced action show about a group of smugglers/pirates making their way outside the law. Very, very, very dark, but the action is top notch and the characters entertaining. But they aren't nice people. At all.

Seirei No Moribito - brought to English as Guardian of the Sacred Spirit, a beautifully animated show about a bodyguard and her charge.

Mobile Suit Gundam: 08th MS team - while most Gundam series are about the hot blooded idiot who falls into the cockpit of a super prototype, 08th Mobile Suit Team is about a squad of ordinary pilots in standard issue fighting the Zeon menace the hard way.

Birdy the Mighty - She's a space cop! He's a totally ordinary high school student! Together* they fight crime!

*literally

Kazemekase Tsukikage Ran - A ronin and a foreign martial artist wander Japan in search of action, riches, justice, and booze(not in that order). Really well done show, and the lead character is amazing.

Lupin the Third - Criminal Mastermind Arsene Lupin the Third and his gang living the high life and committing awesome capers. It's a bit of an older show, and the animation hasn't aged well, but it's a lot of fun. Basically a lighthearted version of The Italian Job.

Puella Magi Madoka Magica - the flat-out best show made in the last few years. It may have the premise of a typical magical girl show, but the art, storyline, characters, and above all execution elevate it to something far, far greater.

Maho Shojou Lyrical Nanoha - another magical girl show, but one that is very, very awesome. Great stories and characters, action packed, with inspiring heroes and well-executed villains.

At first, I was thinking "ah, you just want something that's not shounen trash (except for Soul Eater, it may be shounen, but it's very visually stylish shounen)! This'll be easy!" But you also said Death Note! Really? What's wrong with Death Note? The others I can understand, but Death Note has a thrilling story, excellent animation, excellent music and excellent acting. What on Earth do you find wrong with it?

This is a problem, because my first recommendation was going to be Monster [http://anidb.net/perl-bin/animedb.pl?show=anime&aid=1539], but if the reason you didn't like Death Note was the story, Monster might be a problem since it's also a dark, psychological story with lots of twists. Anyway, I'll recommend to you some of my favorites, I've got broad tastes, so I have no idea if you'll like them as much as I do:

Kino's Journey - The story of Kino, a young traveler who journeys by motorcycle from country to country in a European styled fantasy world. In each country, Kino stays for three days, in order to experience the the country before moving on. It's a philosophical story of human nature, culture, customs and society, very interesting stuff.

Gunslinger Girl - A secret Italian government organization called the "Social Welfare Agency" kidnaps young, heavily injured girls, outfits them with cybernetic enhancements and brainwashes them into being assassins to do the government's dirty work. But make no mistake, this isn't a pure action series, there's a lot of drama revolving around the girls, who, really, are just little girls at the end of the day. The series also features keen attention-to-detail in the firearms, very high quality animation and one of the best soundtracks ever made.

Serial Experiments Lain - A "techo-horror" series, set in a world where the internet is everywhere and society revolves around it. No, this series isn't set in 2011, nor was it made recently. It was made in 1998, back when the internet was still in it's infancy, and well before smartphones. And Serial Experiments Lain predicted it all thirteen years ago. Freaky.

Mushishi - They are neither plants nor animals. They differ from other forms of life such as micro-organisms and fungi. Instead they resemble the primeval body of life and are generally known as Mushi. Their existence and appearance are mostly unknown and only a limited number of humans are aware of them. Ginko one of these select few, a Mushi-shi, travels around to investigate the Mushi. In the process, he also lends a helping hand to people who face problems with supernatural occurrences that may be related to the Mushi.

Naoki Urasawa's Monster concerns the mission of a Japanese neurosurgeon living in Eastern Europe to execute the boy he saved. The series has a lot to do with the interplay between good and evil and the boundary that separates them, or even if there is one for that matter. Virtually every character has an episode or two devoted to fleshing him or her out, so there are quite a few episodes (i.e. 74). Great characters and a unique setting.

Paranoia Agent is...strange, but in a good way. A very good way. Plus, it was created by the late Satoshi Kon, the creative mind behind Paprika and Tokyo Godfathers. Pretty hard to go wrong with this one.

A show directed by Zatochi Kon(Perfect Blue, Millenium Actress, Tokyo Godfathers and Paprika). That inmediatelly qualifies it as anime-elite.

Ghost in the Shell: Stand Alone Complex/Ghost in the Shell: S.A.C. 2nd GIG:
Cyberpunk, great animation, phylosophy all over the place. Great

Ergo Proxy:
Not sure if it counts as an anime, but cyber-punk, surrealism, existencialism, and phylosophy all over the place. Great.

Invader Zim:
It's not anime, but if features some pretty interesting animation style and some pretty foolish and sometimes downright disturbing sense of humor.

Spaced:
It's not anime, it's not even animation, it's a british live-action comedy show around a group of neurotic geeks. It pretty much launched the carrers or Nick Frost and Simon Pegg(Shaun of the Dead, Hot Fuzz).

Ghost Stories and Cromartie High English dubs. Whatever your feelings about dubs are, these two are hilarious. They reworked Ghost Stories from a generic ghost anime into a nasty, vulgar gag dub that's amazing.

Cromartie High stars Freddie Mercury and a Gorilla. That is all.

Simple:

Kodomo no Jikan - A story about a new 3rd grade teacher whose student develops a crush for him... the anime explores the problems that come along with the situation.
It's a short, well-written, tasteful piece of anime.
It was recommended to me by someone here on the escapist, I tried it and loved it.
I have to warn you, it is controversial because of the relationship between a 3rd grader and a teacher. However, I assure you that the story is carried out in a tasteful manner and if you give it a chance and an open mind, like I did, you could end up loving it.
It's only like 10 episodes so you could easily get it on your hard-drive for your trip.

You realize that Death Note is also shounen right?

On to the topic at hand, personally I'd rather watch Finding Nemo five times in a row(greatest movie ever), but if it must be anime:

The Big O- like Batman: the Animated Series

Eureka seveN- Evangelion but explicitly happy... most of the time, must watch BEFORE Evangelion to be fully enjoyable

Neon Genesis Evangelion + End of Eva- If you haven't seen it yet, save yourself the trouble of everyone bothering you to watch it. Honestly, it's one of the better shounen out there.

Panty and Stocking with Garterbelt- [((The Grim Adventures of Billy and Mandy)+(Invader Zim))*(Ren and Stimpy)]^[art style((My Life as a Teenage Robot)/(Astro Boy))]

Literally anything touched by Hayao Miyazaki's hands- more specifically, Castle in the Sky, Nausicaa, Mononoke, Lupin III, Spirited Away, and Howl's Moving Castle

And hey, if you want to add some Japanese comics to the list!

I am a Hero- the good zombie manga (screw that High School of Exhibitionists crap)

Goodnight, Punpun- I'd rank it up there with some of the greatest graphic novels, it follows the life of a boy named Punpun. That's all I can say. Nothing I can write can ever do this comic justice.

Okay, I'm going to suggest Hanamaru Kindergarten as a substitute for this show if you want to avoid the squick of lolicon being played straight.

Baccano!- Its a little confusing at first but its still a must watch!

Code Geass- Kind of like Death Note but the characters are more complex and seeing them put their plans into motion is just awesome.

Welcome to the NHK- If you don't mind a little dark comedy it show is for you I swear it can have you at the verge of tears one minute and Laughing your ass off the next.

Yu Yu Hakusho-You don't seem to like anime like this but I'll throw it out there anyways. Its like Dbz eccept with no filler, a better plot, and better fights.

Just on a side note how about something that's a cartoon?
