At first, I was thinking "ah, you just want something that's not shounen trash (except for Soul Eater, it may be shounen, but it's very visually stylish shounen)! This'll be easy!" But you also said Death Note! Really? What's wrong with Death Note? The others I can understand, but Death Note has a thrilling story, excellent animation, excellent music and excellent acting. What on Earth do you find wrong with it?
You realize that Death Note is also shounen right?
It appeared in Shounen Jump magazine, yes, but I don't consider it a "shounen" title, being it's very different to titles like Dragonball Z, Bleach, Naruto, One Piece etc

I'll be the third to recommend Birdy the Mighty. It's a fun action/comedy that doesn't try to be deep or complex, just a decent story and character development.

Gungrave is another I recommend. This is the "Once Upon A Time In America" of anime. A near perfect mafia crime epic about friendship, betrayal, romance, power, and techno-zombies.

Finally, for a change of pace from all the action, Koi Kaze. This is a controversial one as it's about an incestuous relationship between a 27 year old man and his 15 year old sister, but is also one of the most adult and frank looks at incest in a good while.

Probably going to repeat some others but that's becasue they bear repeating.

Eve No Jikan, a 6 ova series about humans' relationships with their robot servants.

Usagi Drop,a slice of life about a guy raising his grandfather's six year old love child and them building their life together as father/daughter.

Bartender,a series of short stories revolving around bars and the people who frequent them.

Sayonara Zetsubo Sensei, off the wall comedy about a melodramatic teacher and his psychotic classroom making fun of societal problems in the weirdest ways possible.

Baka to Test:a great comedy about a group of idiots trying to get a better classroom via battling with their avatars. THough they only really battle in the first two and last two episodes, the middle is comedy and fun.

Hidamari Sketch: 4 girls(6 in season 3) go to art school and that's it. It's also funny as hell, especially Miyaka odd ball lines, and enough lesyay to choke a horse.

Baccano! and Durarara!! are by the same guy and are both wicked fun with very spastic story telling.

Princess Tutu: Starts of kinda as a light and happy magical girl show then starts getting darker as it goes, a nicely complex story and great characters.

Magical Witch Punie-chan: a parody of magic girl shows with great jokes, and in that same vein Bludgeoning Angel Dokura-Chan.

Mawruru Penguin Drum: Currently ongoing at episode 14, an odd show about two brothers trying to keep their sister alive and that's all I'll say becasue any attempt to describe the rest of plot will end in failure,go watch it.

Gundam Seed and Gundam Seed Destiny are awesome, and a little deeper than a lot of the other gundam series imo

anything Mobile Suit Gundam related (except for Seed/Seed Destiny) with the exception of G Gundam (which is mechs crossed with DBZ without the fillers and extreme haminess int he English dub) all of them are war drama,s and hard sci-fi

Aim for the top! Gunbuster just watch it it,s a space opera/drama combined with the occasional mech fight skip diebuster/gunbuster 2 DB/GB2 it only gets good in the second part if you do plan to watch DB/GB2 watch the original first

Initial D a street racing anime (DO NOT WATCH THE DUB!! the dub is made to appeal to the Fast and Furious crowd which should say enough)

FLCL/Fooly Cooly I don,t even just watch it but don,t expect a coherent story. it starts weird and just get,s weirder.

Well, this is what is happening right now.

What im watching:
"Darker then Black" Collection, it is seriously awesome, I would recommend it!

What I just finished:
Baccano!, Damn good opening and a damn good story with many....main characters...ehehe

My top EVER!:
Clannad/ Clannad: After Story, couldn't you tell by the avatar, well its my top favorite, its probably the best romance/comedy/slice of life anime out there, but it has a great story, cute characters, a damn lovable protagonist and best friend and overall it's my number on!

I have many more I could recommend but I have to many. X_X
