I say it everytime this comes up but Outlaw Star is totally worth a watch. Quick too, only 20 ish episodes so it's not like your spending months to see if the main guy's girlfriend breaks out of prison or not (yeah looking at you bleach)

If you liked FMA and psuedo-medieval fantasy style anime, I can't recommend Scrapped Princess enough. It's one of my favorites. I hear Claymore is another good one in the genre, but haven't seen it yet. I haven't seen the entire thing and it was a long time ago when I saw what I did, but Record of Lodoss War struck me as good back in the day. The dub was awful though. Also if you haven't seen it yet, the second series of FMA, FMA: Brotherhood. They have the subs streaming over at http://www4.funimation.com/video/?page=show&b=280

For supernatural, that's a lot harder to suggest, many of the demon fighting shows are pretty generic and not many move into other aspects of the supernatural. I remember I liked Blue Seed a lot when I was first getting into anime, but I can't really remember any details. I also liked Phantom Quest Corp. which dealt with ghost and vampires, but also don't remember much in the way of details. If you like the horror aspect of supernatural shows, Higurashi no Naku Koro ni is pretty creepy and Perfect Blue is a good suspense thriller.

Addendum to my post: when I say to watch Escaflowne, watch the original TV series, which is far superior to the film version that came after. The series itself is only one season long - 24 eps. I believe - so it's not a huge commitment of your time. Happy hunting!

Soul Eater would tick a lot of your boxes, since youve seen One Piece it shouldn't be too wierd for your tastes.
Buso Renkin is underappreciated and excellent.
And finally, have you tried Bleach? Its swordfights, so kind of medieval, and I think its quite good, but not exactly something to expand your horizons
