These games are not going to be re-made. At least in any other format than first/third person shooter. People mostly are asking for 'intelligent gaming' to come back, but they put this in the form of 'I wish they would re-make this game' or 'I wish they would re-make that game'
I mean look at the titles mentioned - System Shock 2, Deus Ex, Grim Fandango, Homeworld, Age of Empires, Birthright, Baldur's Gate, Vampire Bloodlines, etc. What do they all have in common? Sophisticated stories and gameplay demanding intelligence from the player.
Instead of System Shock 2 we now get Crysis and FEAR, for Deus Ex we now get Deus Ex 2 and Alpha Protocol, for Grim Fandango we get nothing, for homeworld we get indie developer space games but no AAA titles, for Age of Empires we now get World in Conflict, an RTS that plays like an FPS, speed over strategy, for Birthright, Baldur's Gate and Vampire Bloodlines we now get Jade Empire and Mass Effect!
Don't hold your breath, because what you are really all asking for is intelligent games for that stretch you as a gamer, and in today's lowest-denominator, multi-format, politically correct and 'safe' market we now have, these are never coming back.
Generally, gameworlds are getting smaller and stories more shallow. Look at the debate between Morrowind and Oblivion, for example. And even good games, like Fallout 3, are a lot more by-the-numbers corporate affair than the more 'organic' Fallout 1 and 2.
So rather than expect re-makes, do what millions of gamers are now doing - buy the indie games that are more likely to have the depth (Stardock games anyone?), or go back and play these older titles all over again again, via X-Box Live, Sony Marketplace or DOSBox and Virtual PC.
There's a reason retro gaming is the fastest growing genre in gaming today! (With 5 million plus DOSBox downloads, for example!)
