Dark Souls
Great combat, beautiful world, hair tearingly difficult combat (until you learn how to fight well, then it becomes less difficult and more about being careful and not getting a big head). Story is pretty interesting, but its not really given to you, gonna have to read up and pay attention.

Soul Calibur 5
Got it on launch and do not regret the purchase. They took away a good bit of options from some characters from IV (ex. Mitsurugi lost a stance), but what they added more than makes up for it once you practice a bit, get used to the new and improved gameplay (except the lack of free guard impact...), and don't go into it expecting a magnificent story (its a two hour long story mode. Most of the old cast isn't featured and if focuses around the whiniest character I've seen in awhile).

As for a third...haven't played them besides a demo for Bulletstorm. Didn't care much for the gameplay in the demo so I wouldn't recommend it. Heard Arkham City is good though. Plus you're Batman in it. BATMAN. Need I say more?

EDIT: Hm..somehow I managed to miss Deus Ex on that list. Deus is a great game, found it very fun, but you might only get a couple of playthroughs out of it. While that is still well over 40 hours of gameplay if you don't rush, the playthroughs past the first get kind of tedious when you listen to EVERYTHING everyone wants to say.

Dark Souls
SoulCalibur V (remove if you want a good singleplayer experience however)
Uncharted 3

That's my personal choice anyway

Soul Calibur V
Batman Arkham City
Rayman Origins

I would also suggest you do NOT play Bulletstorm (rent it or borrow it if you want), because it is basically a silly form of Gears o War. I had fun playing it, but there is practically no replay value in the game. The multiplayer is completely retarded, and the game reeks of so much Gears o War that it mind as well be "Gears o War + silly gadgets"
Hell, if you want to play it so bad, I'll mail you my copy. I don't play it and never will again. The game is really that bad.

Uncharted 3 is my favorite game of this console gen. Comming in a close second is Condemned 1. Arkham City is the only other one that I've had fun with.

Uncharted 3
Batman Arkham City
Deus Ex: Human Revolution

Reasons: Control, control and freedom of choice.

None of the others thrilled me in the slightest. Bulletstorm actually pissed me off in several ways.

Deus Ex
Arkham City
Uncharted 3

Soul Calibur V's only worth getting if you've got friends you'll regularly want to play with. I often have SC IV matches with my best friend when we manage to see each other, but otherwise I don't touch it.

Only played four of these games, so it won't be that hard.

Dark Souls
Batman Arkham City
Deus Ex Human Revolution

Removed Uncharted 3 since it's not something to recomend if someone hasn't played the previous games. If you have you should've bought it already!
It's also the worst game in the series.

Soul Calibur V
Uncharted 3

your missing one game from that list I believe

Anyway I would pick
Dark Souls
Soul Calibur V
Uncharted 3

given an extra 2 I would get Rayman Origins and Batman.

Arkham City is a good choice. Very well executed game with tight controls and good length. Definitely worth getting.

Driver: San Fransisco. This game needs more attention. If you like arcade-y racing games, this game is perfect for you. With a really interesting and well done car swapping mechanic and a pretty well told story you can't go wrong with getting Driver. (Yes a story in a racing game that isn't crap or "You have to win this tournament".)

After that it's kinda hard to decide. Dark Souls or Deus Ex I guess but I was terribly disappointed with Deus Ex towards the end. It's not a bad game, but it most certainly could have been done better. Dark Souls is the same frustrating / rewarding brutality that Demon's Souls was.

Deus Ex, Bulletstorm, and Uncharted 3...and get Demons Souls on the cheap, if you haven't already, it's much better than Dark Souls IMO.

Batman, Deus Ex and Soul Calibur. Arkham City was one of my favorite games of the year and I picked Deus Ex and Soul Calibur because of replayability.

In order from best to worst:

Deus Ex: Human Revolution
Batman: Arkham City
Bulletstorm

I actually reviewed all three of them in-depth, and in my opinion, out of the many high-quality titles released in 2011, Deus Ex: Human Revolution was the very best game of the last year.

If you want 8 hours of care-free fun blasting madmen to bits with oversize weaponry, Bulletstorm.

If you want a deep and engaging 20-hour campaign, with a intricate story and lots of atmosphere, Deus Ex : HR.

If you want a great time, Rayman Origins.

They're my three.
