Well, I vote for Okami. The amazing style and beauty of it's graphics never cease to make me cream my pants. But I also like Madworld, Viewtiful Joe, and Bayonetta (and all 4 of those games were made by the same company. Platnium Games, will you marry me?)

Okami and Viewtiful Joe are definitely up there for me. Clover Studios, it's really unfortunate that you had to go.

Okami
Outland
Bioshock
Mirror's Edge
Sly Cooper and the Thievius Racoonus/Sly 2 Band of Thieves/Sly 3 Honor Among Thieves
Assassin's Creed(The first one, with Altair)
Golden Sun/Golden Sun: The Lost Age/Gold Sun: Dark Dawn
Tales of Symphonia/Tales of the Abyss/Tales of Destiny/Tales of Vesperia

I could go on. But what I listed are among the most beautiful games I've seen. Especially Okami, the Sly Cooper series and anything in the Tales of Series.

Metroid Prime & Metroid Prime 2. Beautiful and richly-detailed, especially in the latter.

Also, Fallout 3 and New Vegas. They nail the 'cold, dead world' feeling.

The cartoony, OTT look of Fable is great too, I still think an improved remake of The Lost Chapters is very much in order.

Do unreleased games count because I think Guild Wars 2 looks beautiful.

Besides that, I find Sly Cooper, Borderlands, Shadow of the Colossus(duh) and Dragon Quest VIII all to be great looking games.

Edit: Hawken and Firefall too.

God of War series. Seriously great looking visuals. flOw or Flower have great aesthetics too. Dawn of War yeah but technically it is Warhammer 40k that has cool aesthetics.

Got to agree on wind waker. When I first saw it I was convinced it was the worst thing ever, then I played it and was just... wow

Deus Ex: Human Revolution looks nice, from the trailers. All that gold and dark stuff is really appealing.

Lost Planet is quite good too.

Then of course there's the usual suspects (Halo, Homeworld, Mass Effect).

*looks at thread* Hmm, people here don't seem to be fans of realistic designs. I never would have guessed! :p

GTA IV: It has an aesthetic consistentcy that allows you to become engulfed within the relentlessly nihilistic urban alienation of the "other" in post 9/11 New York.

Super Mario 64 was marketed as "Toy Story on a console" it wasn't. Ratchet and Clank: Tools of Mass Destruction achieved this both in terms of graphical polish and the thematic cohesivness between use of colour and gameplay.

Games that I really liked are the Wind Waker and Prince of Persia (the cell-shaded one).

Also don't forget Pixeljunk games and games from ThatGameCompany.

I don't feel like I should need to explain any of those really, there is some subjective factor to Aesthetics but in my opinion those are the best I can think of right off.
Sorry if I forgot any.

Wouldn't say it has the best aesthetics but, Radiata Stories for the PS2 had a pretty cool thing going on.

One that I absolutely love is The Curse of Monkey Island. Especially Blood Island. I think the aesthetics and the overall tone set by the atmosphere surrounding it is amazing. The game as a whole has really good aesthetics to it.
Warning Lots of images.

The game is filled to the cock-eye with problems, but its art design is second-to-none.

Trine - especially the Crystal Caverns. Quite literally breathtaking.

Wind Waker deserves a repeat mention. It's gorgeous.
