Need for Speed: Most Wanted. Everything that made the Need for Speed series great with updated graphics, in my opinion it was the last good Need for Speed game just before they tried to make it too realistic and just screwed it up, which would be why EA is now closing down their department.

burnout 2, even if it only had 4 cars racing at once, me and my brothers still play it sometimes.

All of the Burnouts. There's nothing more to it except pure homicidal car-crashing fun! And Burnout Paradise was the peak of the series!
any of the burnouts and racedriver grid both great games for both serious racign and fun free roaming i cant choose between them so i'll just leave it up to you
Midnight Club 3: Dub edition Remix. That was a gem of a racing game. I still play it over MC:LA.
