Some are better skipped, but others are thoroughly enjoyable. What games in your opinion have a great credits? I predict a lot of Portal answers.

Super Smash Bros. Melee and DMC 3 have good credits.
Pretty much this, plus DMC4.

It's nice having an interactive end credits, as well as a bonus scene or unlock for complete it as well.

Timesplitters Future Perfect

Timesplitters kicks ass.

Second place goes to God Hand.

God Hand and Custom Robo GC (beating the game unlocks first-person mode and the end credits are your first first-person robot battle).

I enjoyed the Gears of Wars credits. Hearing the comments from those involved with the game. Dragon Age Origins credits were memorable with the music that made me scratch my head. (you know what I'm talking about)

I liked Mass Effects 1 and 2.

M4 part II, great song. And Suicide Mission, great track.

The first Mass Effect had pretty good end credits song.

I was a little disappointed they didn't do something similar with Mass Effect 2's end theme.

Although the song from the trailer, Heart of Courage, was really good.

Edit: It looks like someone made a trailer with female Shepard too. Cool.

Golden Sun 1 had all the different battle backgrounds from the game (in the order you played!) as the incredibly awesome GS theme played. Then as icing on the cake, it gave you a cutscene which served as a cliffhanger for GS2.

Medal of Honor: Underground [http://www.gametrailers.com/user-movie/medal-of-honor-underground/61043] had interviews with actual resistance fighters from World War 2, which I thought was a nice touch. Music by Michael Giacchino too.

Portal was awesome though.
