I can't narrow it to one so I'll go with best in genre.

FPS (single player): Bioshock

FPS (coop multiplayer): Borderlands

FPS (comp multiplayer): CoD 4

TPS: Mass Effect 2

Action/Adventure: Uncharted 2

Hack n' Slash: God of War III

Platforming: Super Mario Galaxy 2

wRPG: Fallout 3

jRPG: Tales of Vesperia

Fighting: Super Street Fighter 4

Puzzle: Portal

Handheld: Dragon Quest IX

Superhero: Batman Arkham Asylum

Open World/Sandbox: Red Dead Redemption

Horror/Thriller: Dead Space

Kids/Family: LEGO Harry Potter Years 1-4

Arcade: Braid

Genre Defying: Heavy Rain

I know that's a crazy list but there is really no best game and even the titles that I've listed, all of which are superb, are still highly debatable.

EDIT: I don't play RTS, sports or music games so that's why they don't appear in the list. I also don't own a PSP so that's why the best game for the DS won for handheld by default.
in that case, I'll add

RTS (PC): empire: total war
RTS (console): probably C&C3 or LOTR BFME II or supcom 2... not a lot to choose from

sports: Madden '11,MLB the show '10

i didnt really like heavy rain it didnt stand up as a game, and if i wanted something purely for the story and no good gameplay, id just read a book... which is what i did in fact

Snipping giant list... NOW
I'm surprised that I agree with 90% of this list, though my favorite JRPG is probably Lost Odyssey and favorite handheld game is probably Peacewalker, though I'm willing to stand behind most of the others.

For best Music game I'd vote for either Rock Band 2 or GH2 since they had the best setlists/innovations, though from what I've read Rock Band 3 will probably take the cake in a few months.

So far it's not one. No way. But a few come close:

Bioshock (1), Okami, Super Mario Galaxy (both. Can't say one without the other.), Batman: Arkham Asylum and lastly. Hmmm. I'm gonna say Pokemon: Heart Gold/Soul Silver.

Kudos to: 3D Dot Game Heroes, Little King's Story, Katamari Forever and Demon's Souls too. Oh and Heavy Rain was pretty nice as a change.

And yet, all of those games are better on computer.

As are many of the other games that have been mentioned in this thread.

Assassin's Creed 2 is my personal choice. GTA4 could have been but they messed up bad with all the annoying bits like shitty vehicle handling and having to take your friends out all the bloody time.

No PC elitism here please. Some people like controllers more, some people like keyboard and mouse. Deal with it.

And Mass Effect 2 is just as good on consoles.

Timesplitters

Yeah, I'm cheating and saying the whole series instead of one game, and they are last-gen games, but I don't care. They're a lot better than most of the stuff out now.

Timesplitters forever!
Well done, sir. I still always liked the original over the sequels. Assigning stats to different characters ruined it for me.

But I'm going to have to say LBP, I just love that game so damn much.

Almost perfect. Though I kind of want to argue the jRPG position and stick Valkyria Chronicles in there.

Also, I nominate the following:

Handheld: Persona 3 Portable. Though both this and Dragon Quest should be on the list, just split into PSP and DS catagories.

Racing: ModNation Racers. This game has a few problems with its mechanics (pretty brutal difficulty and some load time issues), but it's just so awesome to be in a race with Optimus Prime, Iron Man, the Batmobile, the Ghostbuster car, Kirby, and the Pikachu kart all at the same time. For many people, GT5 will take this spot. I'm just not into car porn.

Strategy: This isn't even out yet, but I'm going to call this one right now. Starcraft 2. I don't even like starcraft that much, but there's really no competition when the game is a national sport.

Portal, Assassins Creed 2, Batman: Arkham Asylum, Mirror's Edge, Just Cause 2, Split/Second: Velocity, Fallout 3 and of course the Left 4 Dead series...There's probably more but I can't think of them

in your opinion whats the best game this console generation
How can you make us choose from mediocrity. Yes there are some good ones but nothing really stands out this generation. So i will go back to when Gaming was still original.

Pong.
Your going to sit there and say that Half Life and Portal are not good games...okay

Definitely Demon's Souls. Its atmosphere, combat mechanics, replayability and constant feeling of achievement are unmatched.

I haven't played many of the current generation games.

Of those I have played:

Team Fortress 2
Batman: Arkham Asylum
Bad Company 2

It certainly isn't the best game of this generation, but Bioshock is almost certainly the most important. As a game it has certainly been surpassed, but its storytelling, art direction, atmosphere and such will no doubt secure its place as a game to be looked back upon in years to come as the progenitor of its kind. Consider the original Super Mario Bros. Sure, it's old, it has been surpassed, its flaws are more apparent than ever, but we'll always know that it was the game that defined the platforming genre. That is what I expect Bioshock will be seen as in the years to come - not the defining FPS (Doom will hold that crown), but the progenitor of seemlessly merging atmosphere and mind-blowing storytelling with videogaming. As it stands, it is one of the finest examples of videogames as an art form.

I don't know about best game in general but in the RPG category, it's split between the PC version of Dragon Age and Lost Odyssey.
