Timesplitters and Warcraft.

There's been many great series', but all the ones I'd like to say either stopped at 2 or just kept on going :/

I still play User Map Setting games. Wc3 and D2 have had an incredible and unprecedented lasting effect on me. It's like someone stuck a Zod rune in them.

Castlevania. Although the last numbered one was Super Castlevania IV, does that still count?

If it does, Contra. The last numbered entry was Contra 4. Before that, in spite of all the sequels, the series never numbered past 3.

In the same vein as the previous two, Final Fantasy. One could argue Final Fantasy is a series of trilogies. 1, 2, & 3; 4, 5, & 6; 7, 8, & 9; X (I don't call it 10), 12, & 13. Each set represents a different phase or artistic period. If they make a third MMO (please don't, Square!) then 11, 14, and *new number* would form another "set of three".

Super Mario Bros. There hasn't been a "Super Mario Bros. 4"; they gave up on numbers after 3.
Also, Super Mario Land (the GameBoy series) stopped numbering after 3 and is a fantastic series.

Jak and Daxter.

Warcraft.

The Sims. Hard to believe, I know, but there are only 3 numbered Sims games.

Halo. I don't like them personally, but I recognize their impact on the industry.

This greatly upsets me, as my two contenders, StarCraft and Team Fortress, are currently on 2 and I don't see a 3 coming up for a long while for either.

So I guess...

Umm...

(power stone is at 2, jet grind radio is at 2, freedom fighters is at 1, road rash is dead, victoria is at 2, total war series isn't numbered)

Fire Emblem wins by default it seems.

My power of clairvoyance allows me to say Mass Effect.

But, without those powers, I'd go for Metroid Prime.

Kind of hard... I could say God of War, since the first had the best story, the second had really good combat and the third was balls to the walls intense... But it doesn't count really since there has been Chain of Olymps, Ghost of Sparta and the phone one... And no doubt we will be seeing God of Wad 4 soon enough...

So... I say... Uncharted. Because the third will be awesome as well XD

The Elder Scrolls series. They have not only three, but four (soon to be five YAY!) numbered titles, and while Arena and Daggerfall aren't as good as Morrowind or Oblivion, those two make up for the others.

Does Assassins Creed count with Brotherhood as a third installment? If so, I'll go with that.
The GTA series. I love those games, except IV, it got too serious...
Brothers in Arms - I like the historically-accurate aura the game has.
Command & Conquer and Red Alert.

On the future-predicting thingy:
Mass Effect
Dirt (the Rally racing game) - The third installment looks promising

I still say that Metroid Prime trilogy is the best trilogy in the history of Gaming and very little can dethrone it the way games are being made.

I still love the Sly Cooper series as well, the first game loses the openness a bit and the 3rd it a bit cluttered, but the 2nd is my favorite game ever. It has strong gameplay, a open, yet linear world, does stealth well, mixes things up fantastically, and has a strong, compelling story that tastefully uses comedy and drama together, as well has a good chemistry with Sly and Carmalita, plus it has a heart wrenching ending.

I also love both these Trilogies because they actually COMPLETE the games. You can argue that the Sly Cooper series doesn't (haven't beaten the first, 2nd does hint sequel and 3rd almost tells you), but Metroid Prime has definate endings, and if it wanted, didn't HAVE to sequel any of them. God of War and the upcoming Gears, as well as Halo all lose points because they built 2 as a step-stone to the 3rd, but Sly Cooper and Metroid Prime both could have ended at 2 and that'd been that.

They were, and still are, great games! I occasionally replay them, just to experience the nostalgia.
