I'm gonna mention Super Castlevania 4 here, only cause I didn't see it. But yea, I think this is a good thread, I think music is one of the hardest things to create for a video game and yet barely any videogame composers get the credit they deserve from John Q. Public. It's kind of a shame.

Right, I'm probably gonna end up doing a few of these, so don't kill me if I keep bumping this thread.

First and foremost is easily Silent Hill 2. No soundtrack comes close in terms of memorable songs, both catchy and ambient that work in-game and out. The ambient songs reflect the game's mood of loneliness and isolation perfectly, while the catchier more upbeat tunes cover a range of moods and are great for humming along to. Picking highlights is particularly difficult, but I've chosen the first and last tracks on the album, Theme of Laura [http://www.youtube.com/watch?v=qKPOGJvhAII] and Promise [http://www.youtube.com/watch?v=6qalGezr76o].

Next is the Deus Ex soundtrack. The electronic industrial sound perfectly suits the cyberpunk atmosphere of the game, while being dark enough to convey the plight of the in game characters and the decaying urban dystopia they inhabit. The choices for highlights were an easier pick this time around, as the Main Theme [http://www.youtube.com/watch?v=hjQ-3TSfQZo] is catchy, and manages to sound like the theme to a futuristic thriller movie. My other choice is NYC/Hell's Kitchen [http://www.youtube.com/watch?v=RII48begYQ0] because it's ambient yet strangely catchy, and the best atmospheric music of the game.

not to necro, but i've heard it and the score to spellborn is insanely good. (its also huge. almost 1gb of .oggs...)

(combined with the game's graphics, its an awfully alluring package)

but yeah, jesper kyd and matthew florianz definitely made one of the most abstract, flowing and evocative scores i've ever heard for a game there. its such a huge volume of work to digest, and i'm still chewing it bit by bit, but i'm pretty slackjawed at it's quality and moods.

seen it a few times already, but vice city.
it had some great tunes as well as hilarious stations. VCPR in particular.

Last Day: LoZ Majora's Mask
Most of the music in Diddy Kong Racing

And so on...

I'd also like to add that HAL Laboratories makes some pretty sweet game music :D

EDIT: Jesper Kyd also did the Freedom Fighters soundtrack, so, yes, his music is excellent.

The Wipeout series.
Final Fantasy Holy Triumvirate (VII, VIII, and IX).
Metroid Prime 2.
Fear Effect 2: Retro Helix.
Ico (especially the 'save game' music).

Honorable Mention: Metal Gear Solid 3: Snake Eater. Snake Eater is only an opening (and closing) sequence, and at its core a totally shameless tongue-in-cheek jab at James Bond, but I just can't seem to get tired of hearing it.
