I'd have to say PREY. If only that game was as good as it's music... (The actual menu music starts at 0:41)
Also, I'm quite fond of Duke Nukem's theme, especially the Manhattan Project remix.
I especially like the part that begins at 0:15.

Unreal Tournament Main Menu/Main Theme Music. Played it so much on my old Dreamcast when I was little the music is now burned into my head.
