Lego Rock Raiders for PC.

You've got all those Lego guys and their vehicles running around the screen in 3D. It's great. The main menu I mean. The actual game is kinda' lame.

MGS3 as it had Snake taking down gaurds with stylish throws and similar moves all drawn in this beautiful monotone shading, and the pause menu had the FOX log in the background as well.

C&C Generals was pretty good...an endless fight between the UN and Terrorist factions going on in the background, with no side ever gaining the upper hand, always just constantly dying and having new units arrive.

I loved the first new Prince of Persia menu. First one in the Sands of Time trilogy.
It was just some ferns and undergrowth in a dark jungle, with a bit of rain and the main menu choices over in orange/yellow. I always found it calming. But then as you selected NEW GAME, the menu items disappeared and then you heard the prince off screen, then he came flying through the ferns, obviously in a hurry. Total change in the paceing of the menu.
Something about it was just awesome to me.
Also Oblivion as has been mentioned, loved that music. So Epic.
But then, this may not be a best menu music discussion, I think the stuff in the back is important. I´d love to see more important/ interactive/immersive main menus. But then again how long should you spend in a main menu?

its gotta be msg3, where you can control the stuff and change its colour, and also the planet selecting thing in spore.

oh and does the level selecting thing in Mario/donkey kong country games count? you know where you walk from one level to the next.

Adding another vote for the Red Alert 2 menu. Too bad the remix of that tune sucked badly when they tossed it in with their sorry excuse for a sequel.

Every game in the Metroid Prime series, and Super Metroid's is pretty great too. Half-Life 2 and similar are nice as well, especially in the way they track your progress through the game.

Honestly though there aren't too many that really, really stand out. Developers have got pretty good with menus and it's easier to point out the bad examples than the good examples. The worst I've seen in recent memory is F.E.A.R. 2's. Seriously, that is the most unintuitive thing I have ever had the displeasure of using. To confirm an option, for example, you don't just click the Yes button, no, you have to click an arrow to change "No" to "Yes" and then click Yes. It doesn't sound that bad but in practice it's just awkward, and the entire thing is littered with stuff like that. A good menu is functional, works with the theme of the game (artistically) and requires the fewest button presses to get from option to option. If it's good, it usually won't attract too much attention to itself. If it's bad... heh, well, it's the first thing the player sees, and it's going to leave a negative impression.

How has nobody mentioned tomb raider here? Not sure about the more recent ones as I stopped playing them on principle after the 4th game was so diabollical, but the spinning group of random objects? passport? portable CD player? awsome. loved it. You did too.

All three Halo main menus were awesome, had that amazing song going on in the background that gave a sense of epic adventure.

FEAR 1s main menu actually creeped me out a bit lol

I dont know why but i would say the menu in fallout brotherhood of steel. it had a random song. plus the ghoul caracter looked insane

I found the Mirror's Edge menu to be very nice. The relaxing music playing, the all-white buildings, how the game warped from one part of the city to the other when you switched menu options.

I really liked Diablo II's main menu. Very simple, it just showed the characters you could be standing around a campfire in the background. And I liked the hellish font as well.
