I really love Aretha Franklin's version of "Eleanor Rigby."
And Ella Fitzgerald's "Sunshine of Your Love" is also pretty excellent.

As for parodies? Hm. I suppose I'll have to go with the literal video version of "Total Eclipse of the Heart" (look it up on youtube). Hilarious.
