Pretty much anything by Jeremy Soule. Apart from that, I've always thought that the Two Worlds and Two Worlds 2 soundtracks are outstanding.

I would say most things Nintendo, and most modern final fantasy music. I know it's not exactly precise, well not even close, but i dont think i could come up with one song that beats the rest.

Project Chaos. It's the music of Sonic 3 and Knuckles remixed and it's really, really good. All instrumental (bar one) and in different styles so it's not all heavy metal or techno or whatever. http://www.projectchaos.info/php/media.php

Check out Malicious Fingers, Dead Batteries or Walking on Water on youtube if you want a taster.

Jeremy Soule is probably the number 1 VGM composer, at least in the west. He's done more games than I can count, from his incredible soundtrack for Total Annihilation and Supreme Commander to the scores for Morrowind and Oblivion. Look him up for 5 minutes if you do nothing else today.

Some of my other favorites include:

Alexander Brandon - Jazz Jack Rabbit 2, Unreal Tournament, Tyrian
David Wise - Donkey Kong Country/Diddy Kong Racing (all of them), Battletoads
Tommy Tallarico - Earthworm Jim, MDK, Wild 9, Prince of Persia + countless others
Frank Klepacki - Every C&C game except Generals and 4, Universe at War
Bobby Prince/Lee Jackson - Duke Nukem 3D, Rise of the Triad, Major Stryker
Bill Brown - C&C Generals, Rainbow 6 series, Lineage II
Matt Uelmen & Glenn Stafford - Lots and lots of Blizzard's music for all games
Mark Klem - Wacky Wheels (but Wacky Wheels had such a good soundtrack so it gets listed!)

And if you're looking for a more eastern feel, check out Isao Abe, Taro Bando, especially Nobue Uematsu, and most definitely Junichi Masuda. Those last 2 are responsible for pretty much all Final Fantasy and Pokemon music, respectively.

OH! I almost forgot Joe Abbati. The soundtrack he did for Operation Body Count (1994) sounds a lot like dubstep nowadays.

The GTA game series(the songs on the radio).
More particularly, the TBOGT expanion pack of GTA IV.There's this fictional radio station called ElectroChoc, and it's got EPIC stuff.Just search for:
Crookers:Boxer
Crookers:No security
Crookers:put your hands up on me
Busta Rhymes:Arab money

I know most of the examples I gave were songs mixed by Crookers, but I SWEAR they're just SO AWESOME!

Also, search for some Radio Los Santos stuff from GTA:San Andreas,if you're into 90's rap.

Anything by Shoji Meguro, I especially love his final boss themes:

Which is followed by and finally Oh, and just because it's awesome:
Velvet room aria mixed with heavy guitar work. Perfect callback.
The whole track builds up to the part at 5:20 and 6:47. It's insane when you actually hear it in the game.

SMT: Nocturne has some great ones as well, though I haven't reached the final boss there yet (I don't want to hear the track before I get there, it's like a musical spoiler). The guitar solo in the random encounter theme randomizes, but they only included one of the variations on the soundtrack.
