I don't know if it has been said, but in my opinion, Donkey Kong Country 2 has the best game soundtrack ever. It is so amazing how David Wise made these memorable songs that were so beautiful in a 16-bit world, and managed to use ambience and clever instrument choices to reflect the playing environment through music.

Examples:
Stickerbrush Symphony
Bayou Boogie
Forest Interlude
In a Snow-Bound Land
Disco Train
Lockjaw's Saga
Mining Melacholy

All of these are such amazing tracks. Makes me miss my childhood. :(

A lot of the ones already mentioned, except Final Fantasy 7 had terribly irritating music, and no one mentioned black or burnout3

Metroid Prime 1+2 and FF7. I consider the Metroid Series' music to be the most famous, for instance: www.metroidmetal.com

Edit: Oh yeah... and Castlevania collectively.

F-ZERO 64!

Perfect Dark 64 also had a great soundtrack.

I perosnally think a game soundtrack only counts if it is original music (not a compilation of songs from bands that already exist).

LOL @ Halo soundtrack. It's basically just the same two songs over and over. It's dramatic at first, but by the last time I heard it, I was pretty much done with it.
Maybe you should try listening to the soundtrack before you attempt to critisize it (it's quite apparent that you haven't, at best it was playing and you happened to be nearby and mostly unaware).

I'll say that the Halo soundtracks are extremely awesome, in my opinion better than any manner of music produced just to make music.

Metroid Prime has a great soundtrack too, I happen to be listening to it as I type this.
Listening to it by itself? I'll give that a shot. But in-game, I felt like the tracks were often too similar and added to my gaming fatigue. Halo's music isn't bad, Eldrich. It definitely helps distinguish the series from other FPSs and gives the game some cinematic punch. It's effective and gets you pumped up for the next fight. I get that. But for me, the music gets a bit repetitive after a certain number of hours in. There aren't any thematic shifts between tracks. Maybe the soundtrack has a different effect when experienced without the game. I could see that. But that destroys the "enhances the gameplay" argument. For sheer variety and provocation of thought, give Killer 7's tracklist a try. It may not be your style, but it's certainly a less obvious answer to an obvious question.

And Metroid Prime did have some pretty good tunes. I only really remember the ice valley music, but it was pleasant.

I am embarrassed that I didn't mention Silent Hill. Kudos to all who did.

Halo, Metal Gear Solid 3 & 4, Ratchet & Clank (Pick one), Half Life & Sequels thereof, A Star Wars Game, Smash Brothers Brawl, Super Mario Brothers, Tetris, I imagine Bioshock but I don't know firsthand.
Is that all?

Chrono Cross's music is my favorite video game music of all time. It has music ranging from bright and cheery to epic scores for the final conflict but it always staying true to the original "islands" theme as someone I know once put it.

Also, as has been mentioned before, anything done by Harry Gregson Williams has been pure genius (He did the Metal Gear Solid Games as well as some hit movies such as the Chronicles of Narnia).

I could say Final Fantasy, because many of their single titles were fantastic (One Winged Angel, Eyes on Me, Fithos Lusec) much of the music seems somewhat same-y to me.

However I am a little surprised that no one has mentioned the Guilty Gear games (those songs can be amazing!) or if they have I must have missed it.

How the hell can no one of mentioned the Wipeout series!?!?!

That track list to those games was an integral part of the whole experience, its Wipeout that actually got me into electronic music.
I got Sasha - Expander EP because of Wipeout 3... excellent disc. As is the following airdrawndagger. I'm not into the DJ stuff he does though...

Toe Jam and Earl had excellent music; it fit the game perfectly.

If I recall, Reznor scored 11th hour...
Nope, both Guest and Hour were done by The Fat Man and Team Fat http://www.fatman.com/

I second 7th Guest and 11th Hour though, great music. Id also go out on a limb and say Doom. Not the most original, but it fit the game, and they ended up pretty damn iconic.

But my personal favorite is the intro for Full Throttle, with the Gone Jackals rocking it out.

For me it's a tossup between Deus Ex and MGS3 for best original scores, and as for the best licensed music soundtrack I'd have to go with GTA: Vice City

Great Shout. Awesome soundtrack for the whole series.

Another vote for Silent Hill 2

and ICO. - My Wife uses start up track "Castles in the Mist" as her ringtone.
