The story is not the point. There is a part where the family she is travelling with is kidnapped to be interrogated. You never actually find out what happens to them. Not a plot hole exactly but the biggest loose string left dangling that I've ever seen.
As for plot holes, every supernatural story has them because it would take eons to come up with truly consistent universes with alternate rules that must be adhered to. Inconsistencies tend to occur because rules aren't necessarily created before the story begins.
As for the giant eagles... maybe they couldn't fly in to drop the ring off because Sauron would see it and have them shot down before they got close. Once the bad guys fell, the eagles could come in and give transportation out.... just a thought.
