They're both great, but if you have to pick one, go with Guilty Gear X2. It's probably the best release for the series. It's what made me (competitively) get into fighting games.
Based on what I've heard about Guilty Gear, BlazBlue might be a better entry point, but I haven't played the Guilty Gear games (though I REALLY want to) so my opinion doesn't really matter all that much.
If you have a PS2 I'd have to go with Guilty Gear. But if you only have the newer consoles or a PSP, Blazblue would be the better choice. Guilty Gear X2 I found was only really great on the PS2...
I say Guilty Gear - it has more and more interesting characters, plus the music is better. Blaz Blue is just... wierd. But it's fun. It's just not that fun. GG FOREVER!
