Its there to set an atmosphere of the battle, bring an sense of epicness as you fight your final battle, keep you fighting for whatever reason you are. Without good music in the background any boss battle just becomes forgettable, Hell I wouldn't even remember the ending to Super Paper Mario if it wasn't for the Ultimate Show.
