In terms of genres maybe Dark Fantasy (Hellsing, Claymore, Vampire Hunter D, Blood: The Last Vampire, Berserk - A lot of gore

) and Sci-Fi (Ghost in the Shell, Ergo Proxy, Paprika, Akira) are my all time favourites, but I'm open to every and any topic or genre.
As long as it has solid story, doesn't boggle down in minutia and good graphics I'm open to it
Hmmmm, let's start with a few dark fantasy recommendations:
Mnemosyne - "In 1990 Shinjuko, Maeno Kouki enters Rin's agency, Asougi Consulting, asking for help. Taking the case sends her into the lair of Aoyama pharmaceutical. This simple case is the catalyst for events that will take Rin to the brink of death. Unfortunately no matter how painful, Rin can't die through normal means and discovering that truth places Kouki and his family in danger. Rin and her associate Mimi are immortal as a result of their contact with the fruit of immortality. They have one natural enemy, the angels that men become when they encounter that same fruit. But Rin has a very personal demon who is bent on taking her down even if that means chasing her across generations of time. At the bottom of it all is a supernatural being named Apos with a secret that could unravel all creation." Lot's of gore and nudity, like the classic anime from the 80's.
Death Note - "Bored with his deteriorating world and the laconic way of his fellows, shinigami Ryuuk drops his Death Note on Earth and watches to see if it stirs up anything interesting. His plan succeeds beyond his wildest expectations when the Death Note is found by brilliant high school senior Light Yagami, who is also bored with a world he considers rotten. Although initially he regards the book as a prank, Light soon discovers, through experimentation, that the book's claim is true: picture a person in your mind as you write the person's name in the Death Note, and that person dies 40 seconds later of of a heart attack (although a different time frame and manner of death can be specified). Armed with that power, Light sets out on a quest he sees as noble: make the world a better place by eliminating all its criminals using the Death Note. Soon cast as the mysterious "Kira" (a Japanese pronunciation of the English "killer") in the media and on the Internet, some take exception to his playing god, most notably the police and the enigmatic master detective L, who resolves to do everything in his power to stop Kira. Light counters by doing everything in his power to prevent people from identifying or interfering with him, even if that means getting rid of people investigating him." If you want dark fantasy, this is it, it has a protagonist that would normally be the ANTAGONIST in any other series!
Baccano! - ""Baccano", which light novelist Narita translates as "stupid commotion", is Italian for "ruckus". Each of the stories in the series involves several unrelated plots intersecting and crossing each other as events spiral further and further out of control. Immortal alchemists, mafia operated speakeasies, and many other elements of pulp fiction are mashed together for a world straight out of the movies." Rather gory series, and the 1930's setting is just plain cool!
High School of the Dead - "The world is over taken with a very deadly disease that turns humans into zombies. In Japan, several students of Fujimi High School, and the school nurse, band together to survive this apocalypse. The story follows Komuro Takashi, one of the students who survived the initial outbreak." It may seem cliché from a Western viewpoint, but surprisingly, a traditional, George A. Romero style zombie anime has never actually been done until now. If you love traditional zombie flicks, you'll love HSotD. Be aware of all the jiggly tits and panty shots though, the guy who drew the source material normally draws pornos, so yeah.
Higurashi no Naku Koro ni - Maebara Keiichi, a young teenager, has recently moved from the city to the rural village of Hinamizawa with his family. He is adjusting quite well to his new life, making friends at the small school, playing games, passing time in relative happiness, when suddenly a gruesome murder occurs... A mystery begins to unravel ? tracing back to happenings five years ago. As Keiichi learns more about these strange events, he wonders if he will be able to face the truth behind all of this." A murder-mystery series with a slight supernatural angle. Infamous for some rather brutal scenes.
Kino's Journey - "Composed in the form of a series of short stories, this is the story of the travels and observations of the human Kino and the talking motorbike Hermes. Kino and Hermes visit various fantastic countries - a country that can't coexist with others due to the development of telepathy (thus, a country that understands people's pain); a country striving to make everything equal, whose residents are extremely united (i.e., ruled by majority); and so on. Small ripples are formed in the everyday lives of the people living in the various countries by the appearances of the unusual Kino. These ripples gradually become a major influence, rattling the foundations of their normal lives. What will Kino and Hermes see in their travels? And what will be left in the hearts and minds of the people they encounter?" Not particularity gory, but covers some VERY dark subjects. By the time the second episode has ended, it's already covered cannibalism for the sake of survival. Excellent, thought-provoking stories, I strongly recommend it.
Mahou Shoujo Madoka Magika - "Having a loving family, close friends, experiencing times of joy and times of sadness. These are the things that make up an ordinary life. Kaname Madoka is a normal 2nd year middle-schoolgirl who lives such an ordinary life. Until, that is, a strange encounter occurs. She does not know if this encounter is coincidence, or the vagaries of fate, but two things are certain... This is the moment when her destiny changes... This is the start of a new magical girl story!" No, really! Madoka is more of a deconstruction of the magical girl genre, and pretty damned creepy.
Pet Shop of Horrors - "Count D, a quite interesting pet shop owner from an area called Chinatown, sells rare and hard to come by pets to people longing for something special, but with each sale comes a contract. If the rules of the contract are followed, everything goes fine, but if someone should break the rules of the contract, the pet shop cannot be held responsible for anything unfortunate that might happen. Leon Orcot, a homicide detective, has linked many odd and unexplainable deaths together; they all were customers of Count D's pet shop, and he intends to find out why." It's a horror series, as the title implies. Not related to "Little Shop of Horrors" BTW
Shigofumi - "Fumika is a girl with a job as a Shigofumi. This requires her to deliver letters from the dead; the last resort of relaying a deceased person's last message to his/her loved ones: family, friends or significant other. Together with her talking staff, Kanaka, she crosses the boundaries between the world of the living and the world of the dead in order to deliver the letters. But at some point, during a delivery, she gets seen by an old classmate who recognizes her. He then starts investigating what happened to her after she vanished from his class and why she is delivering letters from the dead." Not very gory, but death is the main theme of the show, so it's pretty dark.
Umineko no Naku Koro ni - "Umineko no Naku Koro ni takes place in the year 1986, during the time frame of October 4 and October 5 on a secluded island named Rokkenjima (六軒島
. The head of a wealthy family named Kinzo Ushiromiya, who lives on and owns Rokkenjima, is near death, and eight of his family members arrive on the island to discuss how Kinzo's assets will be divided once he is dead. Also on the island are three family members who live there, five of Kinzo's servants, and his personal physician. After the eight family members arrive, a typhoon traps them on the island and shortly after people start to get mysteriously murdered." - It's basically Higurashi no Naku Koro ni with that classic "murder-mystery on a deserted island" (described by the Haruhi novels well as a "closed-circle" setting) theme.
Sci-fi isn't really one of my favorite genres, so I'm unsure as to which sci-fi series I've seen that you would like.
