My personal favorites?
Tengen Toppa Gurren Lagann: It's a mecha, but it is extremely well thought-out and the amount of thought that went into all the theming is astounding. This is my favorite anime of all time. The point is made extraordinarily clearly without it being shoved in your face. Also, it is the most AWESOME THING YOU WILL EVER SEE. Especially the movies, which are in fact a retelling of the anime. BUT DAMN, THE AMOUNT OF BADASS PRESENT IS EXTRAORDINARY. And in my opinion, the dub is much better than the sub. It just...doesn't work as well in the sub.
Fullmetal Alchemist: Brotherhood: You said you watched FMA. This is like FMA, but the ending isn't made of complete crap and the plot is a lot more intriguing.
Now onto those which I like but not as much as these two.
Soul Eater: Pretty cool anime. Interesting world, intriguing story, rather funny. Just not as interesting or intriguing as I could wish.
Cowboy Bebop: I've seen about half of it. I like what I've seen so far. Not to mention that it's simply a classic.
D.Gray-Man: It is amazing. The mysterious story, the unique world, the likable and occasionally awesome characters, the lack of fanservice...I could go on. However, my opinion of this anime is heavily influenced by my opinion of the manga, which is enormously superior. The anime, in truth, introduces a lot of useless plot elements at unnecessary times. There's just too much filler. However, if you do decide to read the manga D.Gray-man, which I highly recommend, watch the anime beforehand as to get an idea to how everything is supposed to sound. And not the dub either. The dub is near perfect, but a few small things REALLY piss me off (pronunciation of Mugen, Komui, and akuma, and The Millennium Earl's voice which was just butchered).
Let's also not forget that the anime was cancelled while the manga is ongoing. True, only one chapter a month...but I'm patient.
