Former military, so yes I am pretty confident in my abilities. And I own a lot of guns. More importantly...I have a lot of common sense.
Allow me:

Seemed appropriate.

Which branch of the military, if you don't mind me asking?

By virtue of being a large, naturally strong Northern European man with big fists, yes.
But because I have a defusing personality, I have yet to get in a fight, so probably no.

I have to carry a high caliber revolver for work.

So yeah, I think I would be pretty okay.
what is your profession?
Not currently doing it (In Permit Expediting now), but I was a class G Security Officer. The high caliber revolver was because my hands are too big for anything else. I had a Glock 13, but my bottom two fingers hung off of it. The only large handguns are...well...heavy duty revolvers. And even with a .357 S&W Magnum, I could still only fire it with one hand because not enough of my left hand could fit on the grip to do any good.

One guy I'd be fine with my knife. He'd be down in 30 seconds with a broken arm and extreme laceration or stab wound.
Two guys I'd bring them down with slashes.
3 guys I pull out my .45 and see if they still want to fight.
4 guys, I'm ready to pull out if needed, but if I MUST fight I'll fire off a shot in the air to see if they wanna fight.

My advice it to carry a weapon with you at all times. Most people will back down from a fight if you brandish a weapon (hell, even groups will at least re think it) so it'd just good sense.
Also, remember that when sparring in Judo you all have rules you follow. There is no such thing as rules in street fighting so if you're in a street fight, fight to live. If you have to break a bone or cut someone, so be it.

Not always. I used to get into a lot of fights when I was a kid because I was into martial arts. Everyone wanted a piece of me because of that. Sometimes I would get the short end of the stick, sometimes I'd win. Sometimes I'd beat the crap out of 3 guys, and sometimes I'd have my ass handed to me by a single guy. It all depends on who you're fighting and in what shape and mood you are that day. But that was a long time ago. Must be 10 years since I was in a fight. I don't know what would happen today. I'd probably try to talk my way out of a fight.

As for weapons. I don't really like guns. I don't own one and I don't want to have to carry one. I have a lot of blades though. But I don't carry those either. People tend to be suspicious of those carrying a samurai sword in the streets.

Well, I do a lot of martial arts, both unarmed and with weapons, however since I've just recovered from glandular fever im not exactly at the top of my game. Unarmed, I don't think i'd do too well. If I had one of my German longswords... Well, aside from that being highly stupid, dangerous and illegal, I think i'd be able to fend off a couple of guys, hopefully without doing any serious damage.

I don't know. I've never had to find out. I took Karate a million years ago (ok, more like 15), but haven't practiced it since the club I belonged to shut down so I'm more that a little rusty not having practiced in 15 years. Plus I'm majorly out of shape. But even in my prime I don't think I could take 5 guys.

Probably not. I'm the sterotypical nerd, really. I'm out of shape and have no combat training of any kind. If I had the time(or for that matter, a place to actually do it) I'd go work out more. But I hate the usual situps and push up nonsense again and again. Although I find martial arts to be fun. Problem is I don't know any martial arts. I haven't had the chance nor the time to participate in training sessions. I would love to learn Jiu Jitsu if I could ever get the opportunity.

I am unafraid to kick anyone who so much as makes a threatening look toward me in the balls. I won't apologise, I won't think twice. My foot is colliding with their testicles as fast and hard as it can. Not sure I could get five before they got to me, but I'll happily punch and bite if I have to, also.
Normaly this^

However I just started keeping a folding knife in my car and if I felt I was in a bad neighborhood I would be keeping it on me. That said one knife and five guys is not gonna help much. But I'd go for the eyes, and try kicking the knees. Busted knees aren't to hard to pull off and it would be a life time handicap, I should know my friend dislocated his knee when he was 16 now we are both 20 and he still has to wear a knee brace daily and he can't run much if at all. How did he do it? He did an air guitar pose with one leg stretched out at an odd angle "pop" yeah it don't take much.

I know some karate and aikido but I'm a little out of practice. I would never carry a weapon but I do have a butterfly-knife-styled bottle opener. I got a guy to stand down by flicking it around quick enough that in the dark he couldn't tell it wasn't a knife.

Me? Never partaken in a hard fight, knocked down a few drunk ass hats before, but that's really not that hard to do. Done A lot of sword sparring, so I suppose that gives me a bit of an endurance edge, along with usual strength one has from partaking in a sport.

Fighting drunks/untrained folks-

One on one? I can take a hit, I can dish it, and I can keep a clear head. I could probably hold my own, so long as he wasn't armed.

Two on one? Thats getting sketchy. I carry a knife with me when Im out at night/bad neighborhood, but its nothing to impressive, just a little 3 inch blade. So if I had no other option, I could work with it. I would assume that putting the blade into somebodys forearm would likely make them reconsider the fight, if not at least weaken their hits. Still, I'd rather run from that if I could, being outnumbered leaves you pretty damned vulnerable, whatever your training.

Any more? Escape ASAP. If cornered, I'd focus every action on avoiding injury, and getting pass them to escape.

Trained/armed folks? Not even going to fight them. Unless the guy is fall-down drunk and is using little more than a pen knife, its best to assume that somebody who is armed, knows how to use it.

I don't think the best fighters out there could win a Five on One honestly, outside of movies or the like.

Waiting until you are feeling confident enough, is similar to waiting until you are ready to have children. If you wait until you are ready to have kids, you probably wont ever have any. Throw caution to the wind and go for it! I promise you that it will give you plenty of self confidence. I'm not trying to tell you what to do, dont get me wrong. I just wanted to offer a little advice, because when I first started I had NO self confidence at all. I think you would be doing yourself a great service if you just said the hell with it, and gave it a shot. I dont think you will be disappointed. ;)
I have no prior experience with martial arts and I have a fairly average build. Any advice on what specifically would be best and practical for real life scenarios? Just a basic self defense class?
Anything you try, whether its a self defense class, or some form of martial arts, will help. Its a choice for you to choose for what suits you, nothing more. Obviously, it will take time, no matter the choice. Also, one thing for people to remember if you are just starting out in martial arts... it will take TIME to get better. When you are first starting out, and just dipping into the world of martial arts, you will not become Bruce Lee. Pay attention to your sensei, practice HARD, practice ALOT, every single day. Within a certain time frame, which is completely dependant on the individual, you will get better. I just want to stress this, though, because anyone getting into martial arts, and then getting your white, yellow, green belts, and such... dont try to go all Bruce Lee on someone or it might bite you in the ass. You havent mastered the skills at that point, and they can prove as dangerous to you as they can to your opponent.

I'm a HEMA (http://www.hemac.org/php/main.php) fighter and a bit in the middle of my club. As a 55 kilo man with besides HEMA a history in judo (7 years) there is still a smaller chance I come out of a brawl with the average size Dutchman victorious. With a longsword the chances would be turned around even if the other guy has one to. Most people without practice just try to be the iconic knight from the movies and it's easy to win from that, even if these people are extremely unpredictable.

So most of the time it's just running or trying to talk them out of it. Also guns are illegal in the Netherlands so that's no option and I think there is no point in using guns.

Depends. Can I bring my longsword?
If so, I might have a reasonable chance of eking out a victory. If not, no way.

Does crying and / or running until they give up count? :D

The best way to win a fight...is to avoid it ~_~
