Eight Days, looked pretty bitchin' when they demonstrated it wayyyyy back in 2006 at E3 on PS3. No idea what the current state of the game is
This isnt really a game that was canceld but was more just a game that seemed to change massivly during its development stage so that the trailers and the game footage they sent out ended up not being atall like the final product, i am refuring too spore. you see spore was originaly more realistic not comicly oversized and dident look like it was made of plado, you used to be abel to have underwater cities aswell... but somehow they decided "hay this awsome game we made is far too good... lets push back the relese date and make it super kiddy and cut out loads of fetures"

where the hell is the promised ending to the Veautiful "trilogy"? which is now a... duality, I guess.

True Crime: Hong Kong. I was really digging the melee combat in a game for once.

I really can't think of any that were in development and then got canceled. There's a few that never got US releases and a few that were "supposed to" be made and never got greenlit. Anymore I don't even look forward to a games cause chances are they'll suck or never get made.
It may sound strange, but I was looking forward to This is Vegas, a GTA-style game in Las Vegas. I know there's a Vegas in Fallout:NV, but a true representation of Vegas in a game would have been awesome.
Also, I was looking forward to Tiberium. It was supposed to be a tactical squad-based shooter set between C&C3 and C&C4 that follows a GDI special ops squad in stopping Kane's advances in creating more tiberium-based weaponry.
Finally, what the hell happened to MechWarrior? It was teased back in '09, and I haven't heard a damn word about it since. I'm close to giving up on it, and it was a game my dad and I have been anticipating the most.

I'd have to say Free Radical's Star Wars Battlefront 3. I loved the first one way back when, and the second one was pretty decent too. The demo footage that got leaked looked amazing, too bad Free Radical had to drop the project. Now even if the title does get picked back up it's not likely to have the same mechanics behind it.
