Have you played Suikoden V? Best one in the series imo. Really cool stuff in that one.
Yes I did, it was awesome! I still prefer II though, the sprites were fantastic. I'm really hoping for a VI sometime in the next few years >>

At some point I should really play IV too, the only one I haven't gotten to yet.
I really found III and IV to be the worst of the lot. II and V stand out for sure though. Another game you may try is Divinity II. It's a difficult game but you do have a fortress you get to upgrade throughout the game. Takes awhile to get there though.
Didn't really like the gameplay, or the storytelling method of III, but Luc was epic. They need to hurry up with a VI :p

III is my favorite Suikoden, but I haven't played V. I vastly preferred it to I & II. Chris is awesome.

You might like Crystal Defenders on the PS3 (i didn't) but you build up your characters and then place them around the map strategically, and hope you can kill all the monsters that come through your barricade before they steal your crystals.
Try the free demo and if you don't like it, no harm done.

Dark Cloud 1 and 2 are also incredibly boring repetitive dungeon crawlers. Now I'm a grinder and a huge Jrpg fan and even I hate the series. Sure you get to rebuild the town which was possibly the most interesting bit. The story was very shallow, the dungeons just copy pasted levels with a difficult boss at the end, and the battle system while interesting was mired by the fact that your weapons broke way too easily or you were inflicted with some horrible status effect that you didn't have the item to cure or any warning to avoid. Good idea, just not well executed.
I've just saved you having to track them down.

I don't know if this counts... but minecraft is fun as hell.

You don't really build forts per se... but you can if you want.
I've managed to whittle away 2 or 3 hours of play without realizing how long it's been.

There was a really old D&D computer game called Stronghold that was basically this. Although I was like 10 when I played it so maybe I don't remember it that good.

But I loved it what I played of it.

Well there's always Majesty, but in that game you play the god-like 'quest-giver' rather than the receiver. Hiring adventurers as you build up your city, and then sending them out on quests with promises of golden rewards!

Mount & Blade though might be right up your alley however. No plot to speak of, but the game is extremely open ended with insanely good combat and a surprisingly in-depth kingdom management system where you can swear loyalty to the leader of one of the various kingdom throughout the game, attempt to usurp a faction leader at the behest of a contender for the throne, or even try to create your own kingdom through invading and holding independent lands. One of my favorite games out there, and the mod community is extremely active as well.

Baldur's Gate 2 also had some management elements, and what was interesting is that it would change depending on what class you played in the game and was also entirely optional. Warriors could take control of a small keep and its surrounding lands. Cleric would be called in by their chosen temples to council disputes and play the mediator. Thieves could take control of a small guild. Druids could compete for control over a grove. Etc. Etc. Not quite as thorough or in-depth as NWN2's keep, but much more replayable since it was different each time.

Clunky UI? I play roguelikes regularly, and I can't make heads or tails of Dwarf Fortress' gameplay. I've watched video tutorials and read guides, (and been very entertained by the problem of catsplosions), but I can't put the pieces together. It's so unwieldy.

I desperately need a tiles version with mouse support.

DC 1 and 2 should be relatively easy to track down. I found Shining Force EXA online for a neglectful amount.

As for the other person who quoted you saying how much Dark Cloud sucks, it depends entirely on the player. One felt a bit more like a dungeon crawler (especially towards the end), but focused more on making towns fun and how many characters you get to play as. Two town-building is more or less one side game out of many, and you play as two people. They make fun of the dungeon aspect of game Two by introducing a golfing game in the middle of a dungeon out of nowhere. There is also a camera game where you take pictures of random monsters and items to build better things on your quest, a fishing game (self explanatory), a race, and the already mentioned town-builder.

As Dark Cloud focuses on many game aspects in one, Shining Force EXA is your standard, "Go out and fight monsters, then come back and fight more monsters to protect your castle. Use experience and orbs you find while out to buff up your castle's shield, weaponry, and defenses. There is also a ton of story.

I forgot to mention this, and it's not exactly an RPG, but have you ever played Evil Genius? It's unique amongst evil-lab building strategy games and very popular. It's also a PC game. I found it hilarious.

Yes, tis insanely fun. I poured many hours into Max's conquest.

I'm pretty sure that's a TD isn't it? I do rather like those from time to time, but it doesn't really look like what I'm after :/

Liked both majesty's, and have finished them both, quite good fun. A lot of people have said mount and blade, so I'll take a look at the near the end of the month, when I can stop worrying about my stupid net-cap. I don't remember that about bg2, maybe I'll take another look at it.

DarkCloud I liked the demo never found it thou. And I loved Crossroads Keep. I was sad when I couldn´t build more on it in the expansions :(

I was just about to post this myself, but be warned---they haven't quite squashed all the bugs yet because it's only been out a week. Still a worthy sequel to 2008's Game of the Year.

Warband is one I didn't buy on Steam, because GamersGate offered a DRM-free (after initial authentication online, it doesn't bug you again) version for the same price (plus, Steam's notoriously bad about providing the registration keys you need to get support on the Paradox forums for any game Paradox publishes.)

It really lacks in scale though, I wish there was a version of this with more features. My scripting skills with the Construction set (ok, GECK) are non-existent though, woe is me, or else I would have a look at it.
