Chicken recipe:

http://moonpenguin.deviantart.com/art/Chicken-Rolls-68008290

It's delicious and incredibly easy to make.

Stuffed Chicken Rolls

1 Package Stuffing (8 oz) (mm....stovetop)
1 Package of cheese (sliced or shredded, your favorite kind -- though I prefer colby and monterey -- other top choices: mozzarella, pepper jack)
4 Boneless, Skinless Chicken Breasts
Choice of chicken seasonings
4 Toothpicks

Stuffing:

Prepare the stuffing according to directions - stovetop 8oz bags require 2 cups of water and 5 tbsp of butter, brought to a boil. Stir in the stuffing until all water is absorbed. Set to low heat while you prep the chicken.

1. Marinate your chicken in your chosen spices and tenderizers for minimum 2 hours.

I use a basic, flavorless meat tenderizer, some thyme, cumin, salt, pepper, and a bit of Emeril's Chicken Rub (BAM!). It gives the chicken a really good flavor. A dash of cayenne pepper gives it a nice kick, if you like it spicy.

2. Preheat oven to 350 degrees
3. Pat your chicken dry and pound it evenly between 2 sheets of wax paper to ~1/2" thickness. This isn't an exact science -- just be sure you don't pulverize the chicken into vapor.
4. Put chicken onto lightly greased baking sheet.
5. Put cheese inside of chicken, followed by stuffing. Roll it up and stick a toothpick through to hold in place. Repeat three more times.

If you want to serve more than 4 pieces of chicken, simply cook more stuffing and stock up on more cheese. Baking time will need to be increased slightly.

6. Put the rest of your stuffing around chicken on the baking sheet.
7. Bake at 350 for 25 minutes or so, or until chicken juices are clear. Put more cheese on top and bake ~2 more minutes, or until cheese is bubbly.
8. Serve hot and enjoy with your favorite beverage (goes GREAT with margaritas and/or lime enhanced beers, such as corona, miller chill, or michelob ultra: lime cactus)

Lucky bastard. That's my favorite meat.

- - - - - - - - - - - - - - - - - - - - - - - -

///BBQ or Teriyaki or Cheese Chicken.///

*Chop chicken into pieces. May need bone-cutting scissors.

*Put pieces on foil-coated cookie sheet.

*Put in oven at 350* for 15 min. Flip over & cook another 15 min.

*Coat in teriyaki marinade or BBQ sauce or alfredo sause, or breadcrumbs & shreaded cheese, cook another 15, then do it again.

*If you don't wanna use the oven, you can just soak the meat cuts in a bag of sauce for a few hours & BBQ it.
----------------------------------------------------------------------------------------
///Roast Chicken///

*Get a chicken roasting stand.

*Spray with olive oil. Coat in rosemary, thyme, granulated garlic, granulated onion, white pepper, oregano, sea salt, basil, marjoran, & paprika.

*If you're not dieting, put butter between the flesh & skin.

*350* for 1-1.15 hours, depending on the weight of the chicken.
-----------------------------------------------------------------------
///Chop that shit up///

*Boil chicken in a pot for like 3 hours.

*Remove skin & fat. You can also remove skin prior to boiling & pan-fry it in herbs until crispy.

*If the meat just falls right off the bone, shread the meat with your hands, bag it, & put it in the freezer.

*You can use the meat for homemade chicken soup, chicken enchillada casserole, chicken omeletes, breakfast burritos, pot pie, etc.

*Save the water you boiled it in, you can't buy broth that good in any store. Freeze it if you have to.

Chicken Kievs are pretty good, and they do not require too much effort. The ingredients for them are pretty common too.

Kebabs:

Ahh, mushrooms. I simply cannot stand mushrooms. Are they optional?
They can be, yeah. Really, the only things not optional are the chicken and egg.

...shitake are good, though.

Vary how you cook it for sure. My favorite way to prepare chicken breasts is to broil them; if you have an oven or toaster oven with a broil setting, just use that, but otherwise you can just crank your oven up to 500 degrees or so and only turn on the top element. Sprinkle some seasonings on top of it or marinate it beforehand and you've got a wonderful meal.

Also consider chicken caesar salads! Go to the grocery store and pick up a nice cheap light caesar dressing, some lettuce, and a bunch of vegetables ? green onions, tomatoes, cucumbers, carrots, whatever you like. Broil a breast and slice it up, chop up everything else, toss the dressing on top, and you've got a fantastic summer dinner.

Slap some of those chicken breasts on the grill with some applewood bacon, cover said chicken in some Sweet Baby Ray's BBQ sauce and you, my friend, have the most delicious chicken sandwich you'll ever eat. Mmmmm...

I'd recommend you give some of the food to a local food bank.
If you truly have more chicken than you can eat, then I'm sure someone else would really appreciate the donation.
