The one thing you need to know is to AVOID C&C4. Seriously its a game i wouldnt even reccomend to people out of spite.

Other than that, Tiberium Wars, Kanes Wrath, Red Alert 3 and Uprising are all excellent RTS games in thier own right. All 4 of those games also contain ludicrous ammounts of ham [http://tvtropes.org/pmwiki/pmwiki.php/Main/LargeHam].

I played a lot of RA 3 when it just came out. It is pretty cartoony, but I loved it. I played through each campaign multiple times with several friends. It is easy though! The only hard mission was the last one of the allied on hard... I won't spoil it, but you gotta be quick. I played some ladder too until I was like top 300. It was not really competitive. Custom maps came to late and nowadays only a few chat lobbies have people in them.

For the price that it is on steam it is more than worth it. Get uprising too, if you buy RA3 for the singleplayer.

C&C 3, KR and RA3 all have Unit Limits on 360.
If you play on the xbox, there's no wonder the game feels imbalanced. Empire and Allies rely so heavily on the micro intensive air openings (since PK/turret pushing gets denied by tengu harrass). It's just not physically possible to mash buttons fast enough with a controller, but it's doable with a mouse+KB.
As for the carrier problem, I can't remember a single mission where I had this problem. New York? Yokohama? Carriers have such a slow attack that they get denied by pretty much any fast moving vehicles. Try vindicator/apollo or yari/tengu. But I feel this is veering off-topic now :p

BTW: C&C3 (and also RA3) is/are great LAN games, both coop vs AI and 2v2/3v3 etc. C&C Generals Zero Hour is also great for this, especially with mods.
Speaking of mods, any RA3 player should try C&C Retarded: Red Cocaine [http://www.moddb.com/mods/cc-retarded-red-cocaine] (it's not every day you get to advocate something with "cocaine" in the name)! Stupid, and stupidly funny. Best played in versus at a LAN with good friends.
