Skyrim... if you run out of content.. download a ton of mods and there you go.. last time i looked there was 18000+ mods on the steam workshop and more on the Nexus.. so go nuts^^
For a moment there I thought you were saying you'd spent 18000+ hours playing it........which would be two years playing, not including sleep or eating. That would be a lot of content ;)

Armored Core V seems to pretty damn huge. Lots of Mech parts to purchase and almost endless ways to assemble them. I have no idea how many missions there are, but they keep popping up in the campaign mode, i assume that there are hundreds to complete. Aside from that it's also one of the best games i've played this generation, it has a really cool atmosphere and the mecha feel really heavy.

So I have now been looking for some games that are just filled with content, stuff like maps, enemy variety and weapons.

Here are some games that I know of:

Metal Gear Solid: Peace Walker
Binding of Isaac
Dark Souls
Earth Defence Force: Armaggedon (sort of, the enemies and weapons do tend to repeat a lot)
Serious Sam
Magicka (the amount of things you can do is very suprising)

Basicly the idea is that there is always something new around the corner, there are games like Skyrim that while that is also true the game itself never really changes the playstyle, you use one sword and you used them all (same with enemies).

I also accept mods and addons.
Well, depending on what you like, "Torchlight 2" really does fit into this category, because the maps are randomly generated and there are 1000x different ways you can play each character.

Also, get Skyrim on PC and just mod the hell out of it. I'd say it gives you about 10x more gameplay.

And as someone already mentioned, Baldur's Gate 2. It seems like no matter what, you always find more hidden stuff in this game.

As mentioned, Bethesda games are the best for this (and everything else).
The Saboteur is also good, its world is literally covered in Sabotage spots and it took me 60 hours to complete it just once.
GTA V is also marginally good at this, although I'm kinda bored and I only bought it recently. After the campaign there isn't really anything worth doing save the collectibles.

That one actually looks cool but I really hate the Diablo esque control scheme of clicking to move the character, I searched a bit and there seems to be a way of playing it with a controller so I'll take a look.

Hmmm, I had the idea that the latest few Armored Core games were shit, after looking for some reviews it looks like its a bit like Metal Gear Solid: Peace Walker where a lot of the game isnt exactly out there and the player has to work for it (explaining some poor reviews of guys that werent willing to learn the game).

I'll keep an eye on it, never played a mech game before.

PS: How is the single-player, I have heard that its very focused on the multiplayer, even for the campaign

It is a bit nasty to learn because the menus are a bit confusing until you get to know them. The game doesn't explain much and the manual is rubbish, but as soon as you learn how to buy and equip parts it starts to open up. I'm still confused as to why reviewers are so down on this series, especially those complaining about visuals, V looks amazing.
