The boss theme in Sonic 2. That is what I consider the greatest boss battle music that I have ever heard. Seriously!

I know they're not bosses or anything, but the Space Pirate theme in the Metroid Prime series was really top-notch, too. It really plays on your suspense and paranoia when the power goes out and that music kicks in.

The fight with the big trumpet in Rayman was amazing. The whole music of that game makes me feel at peace.

Haha the Great Might Poo, i loved that theme song.

I reckon the best was Bowser from Mario 64. It kept getting better and better as you finished the game.
