From what I understand it's basically just channeling force energy down the arms and out the fingers/palms. So, I mean you could probably use your legs/toes if you REALLY had to I would imagine. Hell, I guess if you had a good enough mastery of the force you could make force lightning come out of the wall or the floor or anywhere.

Choke is easier, and could be used with a stump. Also it wouldn't cause cybernetic hands to explode.
