Sympathy for the Devil, any cover. I just hate the way the Rolling Stones actually sound but they have some good lyrics.

This. Its even my favorite song by Hendrix. (Or rather played by since he didnt make the song)
Well technicaly it is. The riff is completely different and he added a awesome instrumental. The only thing from the original is the lyrics, no one would have noticed it was a cover if he wrote his own lyrics for it.

Perfect Circle's cover of Imagine. The original is nauseating, twee and naive, but APC manage to imbue it with a nice sense of sarcasm.

Also, almost every song Nouvelle Vague cover.

I'm quite partial to Richard Cheese's 'Down With The Sickness' cover too

Eva Cassidy's 'Fields Of Gold' cover nearly makes me cry everytime. That's beautiful.
