Granted, the cast is getting rather old, so in practical terms, I think setting it either waaaay in the past (Old Republic) or waaaaay in the future (Caedus, Fel Empire, etc) would be the best bet. Then you could be more creative with the setting. Although, how much of it is people paying to see the familiar characters in familiar situations?

Shadows of the Empire, done in Clone Wars format since any attempt at physically replacing the beloved original cast would be viewed badly but there's tons of capable sound-alikes. It is enmeshed in the original trilogy so most uninitiated viewers will understand the context. It already has an amazing soundtrack and tons of art to start with, you could just build from there, bringing Gall Spaceport, Mos Eisley, the Bothan Colony and Xizor's Palace to life in beautiful detail.

That or the Thrawn Trilogy, but that one is so long that even three movies might not be enough- I swear Leia hops through like six planets trying to evade the Noghri in the first book alone.

Something during the Sith Era. There is not a lot of detail in the Expanded Universe covering that era yet, it has the potential for huge awesome lightsaber battles, and we would not have to worry about replacing the cast.

Actually, just have whoever did the CGI trailers for The Old Republic make it as an animated feature.

The Thrawn Trilogy. Actually, there's so much great stuff in the expanded Universe. Take your pick. The cumulative result of many writers has made the universe incredibly deep. That's why so much still comes out of Star Wars: there's a lot to pull from and expand on.

Namely, take the control away form Lucas. That trailer showed me how awesome that universe can be in capable hands.
