Well you'd need Fighter 8 to get all "signs", but yeah after that Ranger would be fine. A better option may be Fighter 8 and then Barbarian. You can't cast during a Rage, but Rage itself could be a good way to simulate those times Witchers go ballistic after being wounded. Plus it would allow you to stick to Light/Medium Armour, for will Witcheriness.

But either of them are fine. Ranger has the huntery parts, which is great. The only downside is you probably won't be able to use your Ranger spells all that much unless you invest in Wis.

Plus, Geralt seems to have proficiency in all armor types (hell, his armor in the Toussaint tournament is basically the most stereotypical ye olde platemail ever).

Sure, but while I love the games to death they're not 100% representative of a Witcher. Still, no need to be, and if you want Heavy Armor Eldritch knight, go for it! It'll make you even less MAD because with Heavy, there really is no point for Dex to be above 10.
