Start with the pyromancer instead.
Good starting gear and a low soul level allow it to be molded into anything best.
Pick the masterkey as the gift for some shortcuts.
All other gifts are just more or less useless consumables or they barely do anything at all.

Also don't put points into resistance. It basically does nothing.

I would suggest a hypermode build it you want to cheese PVE and PVP in a fun highstakes way. USe the master key to rush for Red tear stone ring in valley of drakes. Since fall dmg does % of health dmg procing it should be easy enough. Pyromancer is powerful enough that you can SL1 if you want. High base dmg with the only investment is in upgrading the flame and not stats. Leaves you alot of room to focus on core stats.
If you want to go all out later in hypermoding do not upgrade your HP. Halve your health by being cursed and again with the dusk crown ring. So once your far enough to get the sanctus shield you can have RTS and powerwithin on at the same time for a 100% dmg increase!

This is the correct answer.

Only yourself can recommend the best build, as people like different things.

Thus I suggest winging it. Also put nothing into Resistance.

If you want to feel insanely powerful from the get-go, run to the Graveyard and pick up the Zweihander. Then invest enough points in strength to wield it with one hand and you're basically set all the way to Anor Londo (at least). It basically annihilates anything standing in your way, but you have to time your strikes carefully. After that move to maybe the Giant's Halberd (you'll likely have enough points in Strength at that point to wield it one-handed) or the Gargoyle's Halberd, which you'll get as a 100% drop from the second gargoyle in Anor Londo. If you want a classic sword+shield combination, farm for the Silver Knight Straight sword with the Covetous Serpent Ring in Anor Londo. I've found it to be one of my favorite weapons in the game, with very high damage for a simple longsword, fairly light at 6.0 weight and extremely fast strikes. It does require Twinkling Titanite to upgrade though, so keep that in mind.

The Grass Crest Shield seems to be a popular choice for a shield as it increases Stamina recharge, but it only has 95% physical damage blockage. Combine it with the Mask of the Child drop from Pinwheel (there's a 1/3 chance for it), and you'll basically double your Stamina recharge rate. I would suggest getting the Greatshield of Artorias though.

Also, kill Havel the Rock as soon as possible (most easy if you take the Master Key as your starting gift) and use his ring, considering you're going for a knight build. He's insultingly easy using a simple tactic.

I usually start with a sorcerer or wanderer class and boost intelligence during the start of the game, primarily b/c magic is espescially useful against low-level enemies(espescially when they come in mobs). Then slowly start pouring most exp. in endurance, vitality and strength(I like to fast-roll with heavier equipment). Mostly b/c the melee combat is easily the best part of the game. I think I replayed each game like 3 times but I always gravitate towards this kind of approach since its just the most fun to me. Best to just upgrade your stats along what weapons/equipment you want to use.

Don't know about not using a shield. You need to be a pretty skilled player to pull this off properly, espescially in areas that are full of annoying mobs of enemies. Bosses however(espescially the big bulky humanoid ones) are most fun attacking with a two-handed sword while fast-rolling around them.

Anyways no matter how much I love Souls, Bloodborne looks sooooo much better. Its like Souls on crack!

I found the one weapon I enjoyed using was the Gargoyles halberd.

In terms of armor, I think I liked the ... crimson? set for the longest time.

and oh, the ninja flip is pretty much game breaking, definitely look up how to get that ring.

I'm kind of torn - on one hand I really suggest against a dex/parry build for a first run, but on the other I suppose you probably have a good enough grounding from the other games that it probably doesn't matter as much for you.

Big thing to remember is that there are either very few or absolutely no boss fights that allow you to parry an attack - meaning that if you do choose a dex build you have to be prepared to completely switch up your strategy on the bosses. Using a katana I found in a hole of despair I was doing very well through the game with my very first build (dex/parry) until I started hitting boss battles like the twins and unparry-able heavy enemies. The twins mix high speed and strong attacks, which makes the battle very stressful for a character with low health/defense used to hit and run playstyle - you can dance and tickle one of them, until the other catches up and smacks you across the room. Heavy enemies become less difficult, but more tedious, since you can't use the parry to hurry along what should be a trivial fight.

Bizarrely, my hit and run character did amazingly against the quadruplets since all four are equally as slow.

Really I guess the main reason that I suggest against a dex/parry build is that it kind of has a steep learning curve while you sort out parrying early game, and then it gets kind of tedious because you can't deal with enemies as efficiently as other builds once parrying is no longer much of an option.

You probably know this from the other games already but: don't bother wearing full sets. As a lifelong diablo II player I was certain the best possible gear was late-game full/partial sets - in reality there is no set bonus that I'm aware of for anything, and mix and match typically gives the greatest benefits.
