As someone who doesn't like either RWBY or The Asterisk War, TAW really didn't come off well. RWBY at least does something interesting with the setting. TAW makes little sense and seems to me like a rip off of the X-Men, only with all the elements that made X-men interesting and compelling stripped out in favor of the same, tired shop-worn Battle High School tropes.

RWBY has also recently blown that whole school tourney thing up in a explosion of fire and monsters.

They're all really good, especially Neon Genesis Evangelion. The last ones not really an action series per se, though, so if you want a shonen style series, you may be better off with the others. It has the best plot, though.
Nah, not really. While I'm cautiously open to shonen, I've already lost my patience with a lot of typical shonen antics. I understand though that I'll need to temper my expectations a bit with Neon Genesis Evangelion, since its animation is on the old side. Still, it's definitely on my to-watch list. I have an curiosity for the anime portrayal of psychologically damaged people.
It's old, in the sense that it's entirely hand drawn, but the way they use animation is rather genius. I'm a bit of a curmudgeon, though, in that I love old animation. If you want something psychological, you can also try Serial Experiments Lain. Neon Genesis is the king of its genre, though, so what it lacks in shininess it makes up for in depth.

Its also worth nothing that NGE can be quite difficult to watch for someone relatively inexperienced with anime. Its very, very good but I'd never recommend it as someone's first anime. To really appreciate it I'm of the opinion that really you need a reasonably solid grounding in anime in general first.

That's true. And, even if you do understand its themes, you would miss out on what its deconstructing. It would be like reading Watchmen without knowing what a superhero is. Most people would be better off starting with Ghibli, or an action series. Maybe Berserk, if they're a fantasy buff, and like Game of Thrones or Dark Souls.

For someone whose ready to progress past shonen style series, though, I think Neon Genesis, Madoka, and Berserk are great places to look, assuming they have the stomach for it.

I just accept that both suck and move on, they both are rather cliche (Though that's not always a bad thing), they both have under developed characters that aren't that interesting (Though, a point for Ruby. Oobleck and Port are both interesting and entertaining), both poorly define the laws of their world, both fail at dramatic tension and both royally screw up the tournament 'arc'.

But I'm pissed at RWBY more since I actually know Rooster Teeth can do much better. Plus they are really good at fight scenes.
