I love music from the Romantic era.
Schumann, Chopin, Mendelssohn, Brahms...

My favorite song that I've played with an orchestra though is The New World Symphony by Dvorak.

Aside from the Classic classics (Mozart, Tchaikovsky, John Williams, etc.) I love Michael Giacchino. I'm probably biased, because I grew up listening to his themes for Medal of Honor and Call of Duty, but he really makes some beautiful music. The main theme for Moh: Frontlines still gets me.

Elgar is one of my favorites! And I will forever sing praises to my very favorite orchestral piece, Adagio in g minor by Tomaso Albinoni!

Danny Elfman without a doubt, and not just because of his movie soundtracks. His major classical work, Serenada Schizophrana, is simply lovely. I love everything that man has ever done.

For old Classical, I can definitely go for Wagner and Tchaikovsky any day. My favorite neo-Classical composer is, of course, Philip Glass.

As for Film Scores, my tastes are very diverse. Hans Zimmer, Howard Shore, and Michael Giacchino are my favorite artists to use mostly traditional instruments, while Vangelis, Tangerine Dream, and John Murphy, get mad props from me for implementing a multitude of different styles, from Rock to Electronica, to film music.
