Rioters are not after money specifically; their purpose is to vent anger by violent and illegal means. Your question ignores the reality that rioters beat the shit out of you, then take your stuff. Not to mention that not all guns shots are fatal and are more likely to wound then kill, assuming the store keepers can actually hit anything.
