Any Mario, Spyro, Sonic or Crash Bandicoot boss. Also, although it's not technically a boss per se, the last levels in Halo 1 & 3 where you drive the Warthog to/through the ship while it blows up around you, is just so easy (even on Legendary, believe it or not)

Definately Mysterio in Spider-Man 2. He has about six lifebars, all of which are instantly drained the second you so much as brush against him. Best of all, you fight him in a convinience store. Epic.

The old spiderman bosses still felt like bosses and they were sorta easy, but at least they were fun.

My vote goes to the huge spider (Gohma?) in Zelda twilight princess.
Shoot the eye (always the eye). Make statue smash the spider, repeat 3 times.
The spider will die, except for it's eye that will crawl around slowly not able to do any damage.
Another arrow and that was that.
All the bosses in Twilight Princess were laughably weak but this one takes the first place.
