In fact Shadow of Chernobyl is better. Don't forget to install the latest patch and Complete 2009 (an unofficial but very good patch). I don't know if I'd call it open ended though it's more like an fps with huge maps where you can sort of do things your way.
2 things,

1: Welcome to The Escapist!

2: That sounds great, you know that there is a good stable community when there are awesome unnoficial patches being made (Happened for Oblivion as well)

Also, I heard two worlds was a crap shoot, was that info wrong?

And, for X3, does anyone know of a Mod that may actually add in a tutorial? The learning curve is just ridiculous.

In terms of a game similar to Oblivion, try Two Worlds. It's not the greatest, but if you like it, it can be a great time sink.
Main problem with Borderlands is that it doesn't have a really great story and there's a very limited number of missions. I loved it though, but don't expect it to be a time sink if you are looking for a lot of missions.
That quote must have been meant for someone else, right?

I tolerated Oblivion and felt slightly negative and resentful towards Fallout 3.

Morrowind, however... Bad combat aside, it's a masterpiece. Bethesda at their best.

Also, out of curiosity, is STALKER a pure FPS? Or is it similiar to Fallout with it's post apocolyptic melee weaponry?

I enjoy Oblivion a bit more, mainly due to the more enjoyable rogue-esque questlines, which Morrowind's (Morag Tong and Thieves Guild) Seemed a little lack luster.

However, Morrowind was the only one that I finished the main campaign in. Havnt even started the Oblivion one yet.

You'd probably enjoy STALKER: Shadow of Chernobyl and Call of Pripyat. Even though Call of Pripyat is a bit easier to pick-up, I'd recommend starting with SoC, it explains why things are the way they are. The Gothic series is worth getting as well, it's got a similar free-roaming RPG feel.

While not really "open" games (with the exception of Thief: Deadly Shadows) if you tend to play stealthy characters in TES/FO3, you might also enjoy the Thief and Hitman series (one of the developers of Thief 2, Emil Pagliarulo, was responsible for most of the Dark Bortherhood quests so if you enjoyed them you'll probably enjoy Thief).

I usually play things like GTA or Prototype when I get bored of Morrowind/Oblivion/Fallout. Although sometimes I prefer more linear games like Splinter Cell, Resident Evil or the old iD FPS games. It really all depends but I usually play open world RPGs, if I read the post right so do you, I thought this might help your indecision.

Go for the Bioware RPGs, namely Mass Effect 1 and 2. Also, Bioware's Dragon Age: Origins is brilliant.

S.T.A.L.K.E.R: Call of Pripyat

Open ended isn't even half of it.
I have heard great things about that game, never realised it was open ended. is shadows of chernobyl good as well?
I bought STALKER: Shadows of Chernobyl because I was expecting an open world shooter like Fallout 3. I was disappointed. Fallout spoiled me with it's uninterrupted, endless terrain. STALKER 1 hems you into smaller areas though (about 15 in total), each zone surrounded by an unclimbable waist high fence. It really annoyed me. I understand that Pripyat is much better in that it has huge areas for exploration. I'd recommend getting the newer release, with it's superior graphics and roaming capabilities.

Thanks for all the posts guys!

You are so correct! I found the dark brotherhood quests to be the most enjoyable and entertaining experiance in the entire game! When it comes to stealthier games though, I do enjoy a more fantasy-esque world. Which is not to say I dont enjoy hitman, I just havn't played an iteration since the second installment. I will have to look up thieves 2.

This may sound odd, but I went into mass effect expecting to enjoy it, but did not. I Dont know why, but it just did not seem open enough for me I suppose. I really enjoy the illusion of choice that the TES games give. Like going into a shop and thinking "Well, I could just buy this stuff from her, orrrr I could kill her and take it all, orrrrr I could wait until it was night, come in and remove it all without here being the wiser, orrrrrr..." The list goes on and on.

If your into doing the same thing about 50 times you could always go for 100% completion on Just Cause 2. That sinks round about 80 to 150 hours dependant on your methods...

If your more into the sandbox/free roaming games with lots of varied side missions there's always borderlands as someone already said...
Saint's row 2/Crysis were my other suggestions but their not really as big on immersion as the Bethesda games...

try bioware games: mass effects, dragon age. kotor if you can handle older game with basic combat but great story.

a real good sandbox game is mount and blade although less focus on storyline, new warband version has excellent multiplayer also.

borderlands is ok, but not that great.

morrowind etc aren't nearly as fun as the new bethesda titles imo.

Well, you could try X3 Reunion. It's a totally different type of game, a space sim, but it's got the same sense of "Go anywhere, do anything" that made Oblivion so fun.
Though X3 also can involve a huge amount of grind. A large part of the game is being a space trucker who ferries goods from one side of the cosmos to the other. If you enjoy these space marketing elements and work at it for enough days (full days, as opposed to "hours"), you can afford your own space stations, factories etc. and become an industrial tychoon.

That is if you like that sort of thing. I never got more than a few hours into it when I realised I didn't want a second job. Of course, you can play the game as a space pirate or a bounty hunter instead - which is much more fun (if difficult to pull off).

Pripyat is larger, has better graphics and cooler features. Don't know about the unofficial patches. Pripyat isn't an expansion neither, but a sort of stand-alone sequel.

Yeah my friend was extolling its virtues to me before. It actually sounds a lot like EVE, with twitch based fighting instead of point click. I would enjoy X3, just have to learn how to successfully play it first.

Only melee weapon is a knife. The combat is definitely gun-oriented, as well as being rather more realistic (bullets have arcs, armoured opponents are much harder to take down with body shots as opposed to head/limb shots, and if you try to take on five guys without cover, expect to die in about two seconds. Oh, and you can bleed to death if you don't bandage your wounds). It's similar to FO3 in the "surviving in a post-apocalyptic wasteland" feel, but The Zone is a considerably harsher place, where sudden death can lurk around every corner.

It does have one of the steepest learning curves of any game, with the exception of X2.

You might as well do Fallout 1 & 2 while you wait for New Vegas. That's what I'm doing! I just got 1, 2 and Tactics on 1 disc for a fiver and I'm gonna start as soon as I've done Point Lookout and Mothership Zeta.
