Final Sephiroth from Final Fantasy VII
Dante v Virgil in Devil May Cry 3
Any Collossus from Shadow of the Collosus
Chaos from Sonic Adventure
Psycho Mantis from Metal Gear Solid

Most bosses from Devil May Cry, Bayonetta or God of War. These games tend to follow a style of taking down creatures considerably bigger and stronger than you, and look awesome doing it.

Every single boss fight in the original Metal Gear Solid. First time I've had a boss fight where it hasn't been a chore or dying because of some overpowered cheap attack, kicking you out of the fight. They were superhuman but not invincible.

I think fighting Zant in Twilight Princess was fun, just because of all the change in terrain and tactis, and it was very fast pace.

I'd say the final final battle with Ganondorf in Twilight Princess. No more tricks, no more magic, just straight up sword play. Love it!!

Baldur's Gate 2 - the second Irenicus fight (of three) is rough and extremely satisfying to complete.

Also, if you've installed Ascension, the final boss battle in Throne of Bhaal is incredible - although it encouraged power-gaming to a ridiculous degree. Surviving that battle at all, much less with half of your party still alive, felt like handing out the biggest beatdown in history.

Oblivion main quest story had an epic last battle. Even if you didn't fight in it, technically.

Let's see... Merc's 2 was a pretty decent QTE ending.

Agreed that most parts in Forced Unleased were epic.

GOD OF WAR??? Can't believe I forgot that.

There's the few I can think of atm.

I fucking hated that fun-house! It was badly balanced and was hell to deal with, in fact I hated all the shit that had to deal with Mysterio, because it handled pretty badly and awkwardly compared with the rest of the game. But I did enjoy the third and final confrontation with Mysterio in that game, where you find him holding up a liquor store and knock his head in with a single punch.

This reminds me of Spider-Man on the PS1, the final boss was specially made for the game, with Carnage fusing with Dr. Octopus and making "Monster Ock" (easily one of the most pathetic names ever given to a character, even in regards to comic villains), an enemy that ends up obliterating the entire base chasing you down. the "Fight" consists of you running away like a little ***** through their underground base, because if he reached you, he'd use his unbelievable power to tear off your fucking arms.

Pretty beastly fucker. Pretty surprising that this is the biggest and best picture of it that I was able to find, but then again the player never really got a good chance to look at him, lest they lose their spine.
Despite the fact that it's a 10 year old game, this PG8+ creation still fills me with more fear than a lot of games that come out today, the sounds and the like from the final fight are especially disturbing.

Also the bosses in Resident Evil 5 were pretty sweet.

I know most people rag on Oblivion because it has no real boss fights, however I managed to have an epic battle with the giant slaughterfish after stripping butt-ass naked and fighting it with my fists. I am the greatest!

Reaching back to the GCN, I'd have to say an epic boss fight for me is the final boss of Phantasy Star Online Episode 1 on Hard difficulty and up. It adds a third form which actually switches up fighting against him, since he can become invincible to attacks (at least for Hunters, like what I usually pick), and he moves around the area pretty quickly, causing a need for both close and long-range weapons. Additionally, he can "steal" you, and cause you to take damage instead when you attack him.

This is quite true. At least, of the two games of the franchise that I've played, OoT and MM. The intro cutscene revealing the boss and its death scene really helped in this regard. Ah the awesomeness of King Dodongo's death!

Also, more recently, despite how much flak it gets for generally sucking in terms of actually playing it, I found the boss fight in Halo 2 quite epic; all the special, badass elites fighting alongside you, the rings poised on firing and Miranda ducking all the revolving architecture. Quite epic, I thought.

I can't believe I'm satan this, but Lou from GH3 was pretty sweet.

On a more serious note, I'm inKleined to mention the last boss from AC2. That fucker was so intense they heal you before the fight.
