I recently finished reading The Genesis of Shannara, by Terry Brooks, and it was the most wonderfully engrossing epic I've read in years. If you haven't read it I'd highly recommend doing so.

Now, I'm looking for something else along those lines to lose myself in.

Suggestions? Any would be much appreciated.

You could try Mistborn, Eragon, and Wheel of Time.

Also, if you like urban Fantasy, you should check out percy Jackson, Skulduggery Pleasant, and the Dresden Files.

A Song of Ice and Fire series

The Dresden Files (not epic or high fantasy, but too good to pass up).

It's not epic fantasy but it's quite epic.

And I'll just echo the Wheel of Time, Mystborn and A Song of Fire and Ice.

A Hermit's Cave
At the expense of recommending something really old, I'd go for anything Midkemia (and it's associated multiverse) related, particularly the early stuff.

Robin Hobb's FitzChivalry chronicles, David Gemmell's saga of the Rigante are both pretty good as well...

The Belgariad and The Malloreon, by David Eddings.
The Chronicles of Thomas Covenant by Stephen R. Donaldson. Although it is quite dark.

There's the Malazan Book of the Fallen series by Steven Erikson. Though be warned, it will be a long haul if you decide to read it. Each of the ten books is well over five hundred pages with fairly small print (I'd say 10 point) and small margins.

This is high, dark, philosophical fantasy: The Second Apocalypse, by R. Scott Bakker. Basically, a corrupt savior hijacks the Crusades, while a hidden evil rises. It is so much better than I make it sound. It is a series, so you will be reading for a while. Start with The Darkness That Comes Before. Oh, and it features a persecution of magic that is infinitely better than Dragon Age 2's.

If you want Epic/High Fantasy, the previous posters have already suggested some very good selections. However, if you decide you want Fantasy that's a bit more self-aware and genuinely humorous, but still dramatic and very enjoyable all the same, might I recommend Terry Pratchett's Discworld series?

The Death Gate Cycle is a very good epic fantasy series taking place across multiple worlds.

Nine Princes in Amber, Roger Zelazny.

Also, although the Book of the New Sun is arguably not high fantasy, it has a similar vibe to it and is one of the best books (or in this case, series of books) I've encountered, period.

Well for starters the Genesis of Shannara series was written recently to bridge his other series together (the word and the void) and the Legends of Shannara series. I would also recommend reading his other Shannara books as they are all great.

Also as has been recommended, the wheel of time, Mistborn, Malazan book of the fallen (as well as the tangential books written by Ian C Essellmont), the Dresden Files and of course A song of Ice and Fire which is the basis of the HBO series Game of Thrones.

Dragonlance has some pretty good trilogies in it.
Such as the original and Twins.

To echo others, Mistborn and Discworld.
Also: The Lord of the Rings, which should be required reading for any fantasy fan.
If you like your fantasy D&D style, the Legend of Drizzt Do'Urden series by R.A. Salvatore.
The Last Wish by Andrzej Sapkowski is the inspiration for the video game The Witcher, and I thought it was a pretty good book.
aaaaaaannnnd...that's it. All out of ideas.

You forgot Polgara the Sorceress and Belgarath the Sorcerer. Also, Sparhawk series. Pretty much everything that Eddings wrote is funny in one way or another.

Never forget the rutabagas Garion.

I would suggest "The Romance of the Three Kingdoms" by Luo Guanzhong. It is the basis for the Dynasty Warrior series (one of my guilty pleasures) it is a doorstopper. It isn't necessarily fantasy, though there are some magical or fantasical elements to the story. Its just a good read, characters are well rounded, the events are gripping, and there is a helluva lot of violence.
