Emissaries in DA:O jump to mind. They're pretty weak in terms of damage taken, but killing them should be your first priority unless you want to lose half the party in the space of about 10 seconds.

Fast headcrab zombies in HL2. In Ravenholm, those fast buggers jump around everywhere and can climb buildings to get you, attacking in packs. Once they're a the same level as you, they'll lunge over great distance.
Should you ignore one, you will find yourself losing quite a bit of HP.
On the other hand, on medium difficulty, a perfectly timed shotgun blast will one-hit-kill it.

Exemples how NOT to do it: Dwarves in Stalker. They midget bastards will rip your guns from your hands and send them flying, will drain your entire stamina, making you immobile, they have a protective shield imprevious to damage they can put up at any time, AND they have noth ranged and melee attack.
You'd think they would have barely enough hp to survive a single magazine from a simple assault rifle, but no. Those midgets will take a beating, and only an ultra rare rocket launcher round, or well placed sniper rifle rounds to the head will end the battle quickly, without spending either a fortune in medikits, healing yourself to knife them to death, or even more energy drinks to keep stamina at the max level to shoot them without losing your weapon.

I hate those fucking dwarves.

One enemy that comes to mind are the Medusa Heads from Castlevania. Sure, they each die in one hit and only spawn in certain areas, but they come en masse with infinite spawns, can turn you to stone by just touching you, and almost always spawn in areas with conveyor belts, spiked or bottomless pits, or timed jump puzzles. They're more akin to natural hazards with health bars than actual enemies, and it only takes one mistimed jump to send you into spike trap junction.

DO the monsters from ammneisa count, I mean they cant be killed, but that isn't what makes them challanging.

Not wetting yourself is.

Other than that Elites from Reach.

All the bosses I've faced in Dark Souls so far haven't had that much health (More than a normal dude, but not massive amounts) but have been challenging due to the amount of damage they do and their attack patterns.

Poison Headcrabs... Fuck those guys... Sure they just need 1-2 hits but they are a pain to hit (Due to jumping around and dark corners) and are quite damaging when they get a hit off.

Crawlers in Killing Floor, very low health but high mobility and the fact they can surround you easily makes them challenging to pay attention to and deal with while also keeping a eye on the rest of the zeds coming at you.

That's all I can think of at the moment...

One word... Cazadors

I don't care what anyone says. Even on Very Easy, those bastards are a pain in the ass to hit (unless you're using VATS, but if you're facing a swarm, you don't always have the AP to do so) and they're pretty hardy too. It's moreso because they always seem to appear in swarms of 3 or more that makes them nasty... not to mention the poison too.

The superboss of FF9, Ozma, doesn't have all that much health but it can kill or cripple your whole party in an instant if your abilities and equipment aren't right.

Also, Yans. Fucking yans. If you hit for 9,999 you can kill them in two hits but they counter by blowing the attacker out of the battle. They also use Comet, which has the potential to do 9,999 to one party member. There are strategies that make killing them fairly easy but they're not foolproof.

The bed of chaos in dark souls. Takes 1 hit to each of it's 3 parts, but beats the hell out of you and knocks you into the holes in the floor with tentacles on you way those 3 parts.

Shoot them in the wings with a full auto weapon with hollow point rounds. Vance's SMG with HP rounds shreds them very nicely.

Thorian guards from gears of war. The take the same amount of punishment as any locust grunt, but on higher difficulties they only need one shot to paint the room with you.

Kingdom Hearts: Birth by Sleep gives us Vanitas. Little health,little defense,hits like a freight train (loaded and built with uranium),moves extremely quickly,teleports (leaving behind a phantom image),belts out long combos fast,and finally,he has some nasty magic.

He's a ***** to fight. Every time I fight the bastard,I usually have to take twenty tries. And I grind a lot so I can level up my commands.

The cheap yet seemingly well designed thing to play on is speed and/or agility, speedy opponents are always a ***** to fight and because they are still fragile it feels so damn good when you land a direct blow.

Another one is the glass cannon effect (hit like a truck but should never let anyone touch you), which is pretty much the secret to Demons/Dark Souls.

The birds from the first Ninja Gaiden...they would swoop down on you and knock you back into pits. Worst enemy in the whole game, even though they only took a single hit to kill.

The Bosses in Metal Gear Solid 3 (Well most of the bosses in the entire series, but 3 in particular). The have very little health compared to most boss battles in games but you have to find a way to actually find them/hurt them.

Kingslayers in the Witcher 2 Arena Mode. motherfuckers have next to no health, but they chain combo you for 70% of your health in 2 seconds if you let them hit you. fuck those guys.

Any boss which takes advantage of "Boss Arena Urgency" [http://tvtropes.org/pmwiki/pmwiki.php/Main/BossArenaUrgency], especially when the fight doesn't end quickly, will qualify here. The most common examples of this are when the boss' attacks take out the floor (or at least make standing in parts of it a bad idea) you're fighting on, leading to a progressively more desperate situation where the player has to balance between surviving and attacking the boss. There's a time-limit to beating the boss (preventing the fight from dragging out too long on principle), but it's an organic (and much more interesting) way of implementing it than simply having the timer run down as you're fighting.

The nature of these battles means they're extremely easy to start with, but they get more (and more, and more) difficult as the fight goes on. However, these fights have to be finely tuned or else they'll become either too easy or way too hard; and this is in direct relation to the length of the boss' health bar. If the boss dies quickly, the hazards it's creating don't have enough time to become a threat; if they take forever to kill, it can seem impossible to beat the boss before there's literally nowhere left to stand. There's also the issue of missed "safe zones" (places where the boss can't destroy), which the player can exploit and negate the point of having parts of the arena become unusuable in the first place.

Done right however? Boss Arena Urgency can make for a very interesting and challenging boss encounter.

Splinter Cell Conviction enemies die in 3 or so shots and don't come in threatening numbers, but they're damn good tacticians and will flank, reorganize themselves into good positions once they've spotted you and will advance from cover to cover to get to you rather than running out in the open. First time I've been stunned at enemy A.I since Half Life.

Fucking dogs man. They're easy when you have poise or if u stab from behind a shield, but god I hated them so much when I made a sorcerer and reached that place. Also, they cause bleed, not poison :p

Metal Gear Solid does these very well. Psycho Mantis, Sniper Wolf and The End are great bosses to fight because they're so tactical.
