Well, out of actors that most people know, I'd say probably Christian Bale. Ever since I first saw "Equilibrium" so many years ago, I've been a fanboy.

But, being a Broadway geek my favorite actor is NOT a movie star(well, he's done some movies, but nothing really big). His name is Hugh Panaro, and he is a far, FAR better actor than about 99.9% of Hollywood actors, and if given the right role could probably be a serious contender for a Best Actor Oscar. And he's the absolute nicest person you could ever hope to meet(like, willingly hung out with me for an hour after a performance instead of going home, which was awesome).

Daniel Craig is great as James Bond (he's also smexy! )
I like Clive Owen a lot for Sin City and Inside Man.
Morgan Freeman and Tim Robbins were great in The Shawshank Redemption.
But also Simon Pegg, Nick Frost, Patrick Stewart and Kiefer Sutherland.
I can't think of any actresses that I like, except maybe Jamie lee Curtis in A fish called Wanda.
